1/4 c Onion; Chopped, 1 Sm 2 ea Jalapeno Chiles; * 2 ea Cloves Garlic;Finely Chopped 2 tb Vegetable Oil 30 oz Black Beans; Undrained, 2 Cn 1 ea Chipotle Chile; ** 1 ts Red Chiles; Ground 1/2 ts Salt * The Jalapeno peppers should be seeded, with care, and finely chopped. ** The Chipotle Chile should be one that has been canned in Adobo Sauce and it should be chopped. Cook and stir the onion, jalapeno peppers, and the garlic in the oil in a 10-inch skillet over medium heat until the onion is tender. Stir in the remaining ingredients and mash the beans. Cook, uncovered, stirring occasionally, until thick, about 15 minutes. Serve.
Please let the record show that these beans are not REfried in any way, if anything they are simply WELL-fried. It's not really worth fighting over, however, because no matter what you call them, these beans are absolutely delicious.
An absolute must as an accompaniment to your tacos, I'll even sneak a spoonful of these beans into a warm tortilla and sprinkle on fresh queso fresco for a perfect snack midday (or midnight) snack.

Ingredients: 1 tsp oil 1/2 chopped onion 1-2 chopped jalapeño peppers 1 tsp oregano 1 tsp cumin 1/2 tsp salt if needed 2 cans of pinto, red, kidney or chili beans of your choice.
Add oil to a hot pan and quickly sauté the onions and jalapeños. Add oregano and cumin, then add two cans of beans with their liquid. Mash well with a potato masher and cook for about 5-10 minutes constantly stirring until they are at your desired consistency. They thicken more on cooling, so don't cook them too dry.
