How To make Rigatoni Al Gorgonzola Romana
1 c Heavy Cream
1/2 lb Gorgonzola cheese, crumbled
1/2 ts Nutmeg, grnd
2 tb Butter
3/4 c Parmesan, grated
Heat cream to simmering, do not boil. Add Gorgonzola, salt, pepper and nutmeg; crush Gorgonzola against the pot's sides with the back of a wooden spoon until it's thoroughly mixed. Cook rigatoni al dente, toss with butter, then mix the pasta into the cream sauce. Mix in about half the Parmesan, serve the rest at table. [It's worth a trip to the Italian deli to get a GOOD hunk of Gorgonzola for this!] -----

Pasta alla Norcina might be the best pasta that most people in America haven't heard of. It consists of pan-seared crumbled sausage in a creamy white wine sauce with a touch of nutmeg. Traditionally this dish uses a mild sausage and is finished with black truffles. To keep it economical I instead used a bit of baby Bellas diced up. I hope you enjoy this pasta alla Norcina recipe!

PASTA ZOZZA - GUANCIALE DATTERINI E....RITORNO ALLE ORIGINI #CUCINANDOMELAGODO
Ciao a tutti, eccomi tornato con una nuova ricetta! Ieri sono andato a fare la spesa e visto che avevo a disposizione ingredienti freschi appena comprati, ho deciso di preparare questo piatto ritornando alle origini di cucinandomelagodo: LA PASTA ZOZZA ????
Non è una ricetta light, ma è facile da preparare e può essere considerato lo sgarro giusto per iniziare la settimana al meglio. ????
Ecco la ricetta per tre persone:
• 280 g di calamarata pasta
• 160 g di guanciale
• 100 g di datterini ( freschi o in conserva)
• mezza cipolla bianca
• 1 cucchiaio di pesto
• 1 cucchiaio di pecorino romano
Procedimento:
Mettete a bollire sufficiente acqua non salata, dove cuocerete la pasta, quindi in una padella mettete il guanciale tagliato a cubetti non troppo fini e regolari, con la fiamma al minimo, fatelo sciogliere . Ci vorranno circa 7/8 minuti. Quando avrà rilasciato abbastanza grasso, scolate il guanciale e tenetelo da parte, quindi soffriggigete la cipolla tritata, aggiungete i datterini e calate la pasta.
Ricordate che la pasta dovrà cuocere per metà dei minuti in acqua e la rimanenza in padella. Aggiunti i datterini, abbassate la fiamma e lasciate che cuociano girandoli ogni tanto per 8/9 minuti.
A questo punto scolate la pasta Nel sugo, continuandone la cottura aggiungendo poco per volta acqua di cottura.
Quando la pasta e al dente potete abbassare la fiamma, aggiungete il pecorino e il cucchiaio di pesto.
Mantecate la pasta, finché non risulterà cremosa.
Servite con sopra il guanciale croccante

Ingredients for 1 person
80 g of Rigatoni
100 g of gorgonzola
100 g of speck
50 g of walnuts
grated pecorino romano
half a glass of white wine
1 clove of garlic
olive oil
How to Make FOUR CHEESE PASTA Like an Italian
Four cheese pasta is even creamier than carbonara and cacio e pepe! (Who thought that could be possible?!) So if you’re a fan of those dishes then this is a MUST-HAVE! Combining four different cheeses with Gorgonzola as the hero, the only thing you really need to prep is a handful of walnuts - and that’s to garnish at the end! This could be my new favourite pasta – and it couldn’t be easier to make! What cheese are you going to use?
