Ingredients

pound
ground beef
3
each
bread, sliced, torn into small pieces
1
each
egg
1
each
rotel diced tomatoes and green chilis (10 oz)
1
each
onion, chopped
2
teaspoon
chili powder
1/4
teaspoon
black pepper
1/3
cup
chili sauce
Directions:
Combine first 7 ingredients. Spread in ungreased 8 1/2x4 1/2x2 1/2 inch loaf pan Bake 1 hour at 375 covered with foil; drain excess drippings. Spoon chili sauce over cooked loaf and bake 15 minutes more uncovered.

BBQ Meatloaf aka Smoked Meatloaf
Meatloaf is comfort food at its finest. I grew up in the south and my Mom made us meatloaf all the time. We didn't have a lot of money, so it was a way to feed the family a hearty meal on a budget. In the video and recipe we will substitute BBQ sauce for the traditional ketchup. We will also add my secret ingredient, Worcestershire sauce! Of course I have to add my smoke element to everything I make as I don't cook indoors. We are going to roll this low and slow on an offset smoker although it's fine to cook it hotter and can also be done on a pellet grill.
This recipe makes 2 meat loafs in a 9x13 pan. You need 4 lbs of ground meat. We typically use beef, but this is a great place to use some of that ground wild game you have in the freezer. Elk and venison are great choices!

Meatloaf Ingredients:
2 lbs Ground Beef
1 med Onion, finely chopped
2 large Eggs
3 Garlic cloves, minced
3 Tbsp Ketchup
3 Tbsp fresh Parsley, finely chopped
3/4 cup Panko Breadcrumbs
1/3 cup Milk
1 ½ tsp Salt, or to taste
1 ½ tsp Creole Kick
¼ tsp Ground Black Pepper
½ tsp ground Paprika
Meatloaf Sauce Ingredients:
3/4 cup Ketchup
1 ½ tsp White Vinegar
2 ½ Tbsp Brown Sugar
1 tsp Garlic Powder
½ tsp Onion Powder
¼ tsp Ground Black Pepper
¼ tsp Salt

Jack’d Up Smoked Meatloaf gets it’s name from the insane amount of Jack going on inside! This meatloaf is insanely moist because of the Jack Daniels in the meat, ridiculously addictive because of the pepper jack cheese oozing from the middle, and unbelievably bold because of the spicy Jack Daniels sauce smothered on top. Add the subtle hints of wood smoke to the mixture and you’ve got a meatloaf worth eating.

How to make a Classic Meatloaf
Meatloaf Classic
1 ½ pounds ground beef
1 egg
1 onion, chopped
2 garlic cloves finely chopped
1 cup milk
1 cup dried panko bread crumbs
1 tablespoon Worcestershire sauce
About 2 teaspoons kosher salt and black pepper
2 tablespoons brown sugar
2 tablespoons prepared mustard
⅓ cup of ketchup
Instructions
Step 1
Preheat oven to 375 degrees F (175 degrees C).
Step 2
In a large bowl, combine Bread Crumbs and milk and let sit for 15 min until all the milk has been absorbed into the bread crumbs then add the beef, egg, Worcestershire sauce onion, Garlic. Season with salt and pepper to taste ( To Taste for Seasoning cook a little bit of the meatloaf in a pan and cook all the way through, Then taste and adjust.) and place in a 9x5-inch loaf pan, or form into a loaf and place in a 9x13-inch baking dish or mini loaf pans
Step 3
In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
Step 4
Bake at 375 degrees F (175 degrees C) for about 40 min to 1 hour or until the inside temp reaches 160 *f
Let rest for 10 minutes and cut and serve.

INGREDIENTS
- cabbage
- 1 ½ lb ground beef
- 1 TB tomato paste
- 14 oz tomato sauce
- red pepper
- green pepper
- white onion
- salt/pepper
- 1tsp cajun seasoning
- 2 TB garlic powder

1-2 lbs meat of choice .. you can use ground chicken. beef. or turkey
* used 3 lbs which can serve 6-7 people .. keep in mind meatloaf is great for leftovers such as sandwiches etc.. this also freeze well, just wrap in seran wrap and freeze*
3 slices bread
1 cup milk
eggs * 1 egg per lb of meat used *
desire amount chopped bell pepper and onion ( I used about 1/2 each*)
3 tbs wortchesire sauce
3 tbs onion and garlic powder
1 tbs salt
2 tbs beef bouillon ( or 2 packs onion soup mix )
1/2 cup bbq sauce ( or desire amount )
To make the glaze *This is to taste so please adjust to your liking *
1 cup ketchup
1/3 cup brown sugar
1/2 cup bbq sauce
3 tbs wortceshire sauce
