How To make Roast Prime Ribs Of Beef
12 pounds Prime Rib roast, at room temperature
Salt and freshly ground pepper, to taste
Preheat oven to 425 degrees.
Season roast with salt and pepper. In a roasting pan place roast, fat side up, so that ribs of roast act as rack. Roast for 30 minutes and reduce heat to 350 degrees. Continue to roast for 2 hours more or until meat thermometer registers desired doneness. Transfer to platter and let rest, covered, for 20 minutes.
For the pan sauce:
2 cups beef stock or canned broth Sprig of thyme or 1/2 teaspoon dried Worcestershire sauce, to taste Salt and freshly ground pepper, to taste
Skim off fat from pan drippings and add stock and thyme. Bring to a boil and simmer 10 minutes. Season with Worcestershire and salt and pepper to taste. Transfer to a sauceboat.

INGREDIENTS WITH GRAM AMOUNTS
1 6-pound (2800g) Prime rib or beef rib roast - rib bones removed and tied back up (ask the butcher)
3 tablespoons (30g) Diamond Kosher salt or 2 tablespoons (30g) Morton's Kosher salt
1 tablespoon (6g) coarse black pepper
For the au jus
3 tablespoons (40g) olive oil
3 pounds (1360g) oxtails, neck bones, meaty beef bones
1 teaspoon beef base - see notes in print recipe
6 cups low-sodium beef stock
1/2 cup (120g) dry red wine
5 cloves garlic
2 large carrots - chopped
3 ribs celery - chopped
1 large onion - chopped
1 tablespoon (13g) tomato paste
2 sprigs thyme
1 large bay leaf
salt and pepper - to taste

Standing Prime Rib Roast
Standing Rib Roast is considered by many to be the best roast beef in the world. Also known as Prime Rib, it’s a beef cut that’s incredibly succulent with superior taste. This recipe uses a safe, simple but highly effective roasting method so the beef is blushing pink all the way through.
Top tip? Pull the beef out before the target internal temperature as the meat continues to cook as it rests, taking medium rare beef to medium. Otherwise, it overcooks while resting!

Prime Rib: Beef Bacon X Blue Cheese #shorts
Charred and rendered beef fat is the best bite of a steak. Smokey and packed with flavor, it melts in your mouth.
This is very different from the thick layer of fat separating the eye and the cap of a rib roast. While edible, it’s trapped inside the roast during the cooking process and therefore never exposed to high or direct heat. Beef fat only starts to break down around 130F, so at medium rare, this knob of fat can’t sufficiently render.
Prime rib should already have great marbling, and I find that this non rendered blubber is unnecessary.
To maintain it’s original shape/appearance, I re-added blue cheese and beef bacon. If you don’t like blue cheese, feta or goat would be great alternatives.
I smoked this prime rib at 250F for about 3.5 hours and pulled at 120F internal. You should expect ~13 degrees F of carryover when cooked at this temp. The hotter you cook, the more the carryover!

1 4-5lb Bone In Rib Roast
1 stick butter
1 quart beef stock
1 cup red wine
1 tbsp diced rosemary and thyme
1 tbsp herbs de provence
1-2 tbsp garlic paste
salt/pepper/garlic/onion powder
Smoked Paprika OR BBQ Rub (Killer Hogs THE BBBQ Rub)
celery/onion/carrot
Slurry (2 tbsp corn starch + 4 tbsp cold water - to thicken gravy)
Directions:
Allow roast to come up to room temperature (about 2 hours). Season heavily with good quality salt. Allow butter to soften on the counter for a while before making your compound butter. Mix 1 tbsp diced rosemary and thyme with 1 stick of soft butter, garlic paste, herbs de provence, and seasoning. Once roast is close to room temp, finish seasoning with onion powder, garlic, black pepper, and optionally some BBQ rub. Next, rub the compound butter over the roast. Preheat oven to 500 degrees. Place roast in roasting rack after adding stock/wine/veggies/ and herbs to the bottom. Place in the oven for 5 minutes per pound and then turn the oven off and set the timer for 2 hours. Allow the roast to rest for 30-45 minutes before slicing and serving. Strain the pan drippings into a saucepan and use for gravy. Use slurry to thicken the gravy if needed as seen in the video.
