How To make Ruby's Lemon Lush
1 1/2 Sticks of butter or
Margarine 1 1/2 c Flour
3/4 c Chopped pecans
8 oz Cream cheese
1 c Powdered sugar
2 Small containers of
Cool Whip 2 Small boxes lemon
Instant pudding 3 c Milk
1. Cream the butter and flour. Add the pecans and press into the
bottom of a 9x13-inch pan. Bake for 25 minutes. Cool. 2. Meanwhile, mix the cream cheese, and powdered sugar. Stir in one
container of Cool Whip. Spread on cooled crust. 3. Mix the pudding mix and the milk until thick. Spread on top of the
other stuff. Sread the other container of Cool Whip on top. 4. Cover and chill over night. Can also be frozen. Cut into squares.

**Ingredients:**
- 1 package (3.4 oz) lemon-flavored instant pudding mix
- 1 ½ cups cold milk
- 1 cup whipped cream or whipped topping
- 1 cup mini marshmallows
- 1 tablespoon lemon zest
- 2 tablespoons freshly squeezed lemon juice
- 1 ½ cups crushed graham crackers
- ¼ cup unsalted butter, melted
- Lemon slices and mint leaves for garnish (optional)
**Instructions:**
1. **Prepare the Graham Cracker Crust:**
- In a bowl, combine the crushed graham crackers and melted butter. Mix until the crumbs are coated evenly.
- Press the mixture into the bottom of a 9x9-inch serving dish to create the crust. Use the back of a spoon to press it down firmly. Place it in the refrigerator while you prepare the filling.
2. **Prepare the Lemon Fluff Filling:**
- In a large mixing bowl, combine the lemon-flavored instant pudding mix and cold milk.
- Whisk for about 2 minutes until the mixture thickens and the pudding is fully dissolved.
- Gently fold in the whipped cream or whipped topping until well combined and smooth.
3. **Add the Zest and Zing:**
- Add the lemon zest and freshly squeezed lemon juice to the lemon fluff mixture. Gently fold them in to incorporate the zesty lemon flavors.
4. **Layering the Dessert:**
- Take the graham cracker crust out of the refrigerator.
- Sprinkle half of the mini marshmallows evenly over the crust.
5. **Fluff it Up:**
- Pour the prepared lemon fluff mixture over the marshmallow layer in the dish. Spread it out evenly with a spatula.
6. **Finishing Touches:**
- Sprinkle the remaining mini marshmallows on top of the lemon fluff layer.
- If desired, garnish with lemon slices and mint leaves for a pop of color and extra freshness.

What you will be needing
1 3oz box lemon jello
1 8oz tub cool whip
3 to 6 drops yellow food coloring optional
1/2 cup cottage cheese
1/2 cup pecan pieces
2 teaspoons lemon juice
2 1/2 cups fruit flavored mini marshmallows
1 20oz can crushed pineapple in natural juices drained very well
1 cup sweetened coconut

Mother's Day is in a few days, and we wan to bring you a dish your mom is sure to love. Try Donna's lemon lush!
Directions:
Combine 1 stick softened butter, 1/2 cup chopped pecans, and 1 cup of flour. Place in baking pan. Bake at 350 for 15 minutes and let cool.
Beat together 8oz of cream cheese and 1 cup of confectioners sugar together. Then beat in 1 cup of cool whip. Spread on crust once cool.
Beat 2 packages of lemon putting together with 3 cups of milk. Add on top of cream cheese mixture. Once set spread with remaining cool whip from container.
Enjoy!
