INGREDIENTS
Makes around 6 s'mores
For the cookies
75 grams milk chocolate chips
75 grams dark chocolate chips
150 grams unsalted butter, softened
225 grams plain flour
75 grams caster sugar
75 grams soft brown sugar
1 large egg
1/2 bicarb
6 giant marshmallows
50 grams milk chocolate, melted
INSTRUCTIONS
Preheat the oven to 180°C. Sieve the flour into a large bowl and add to it the remaining dry ingredients. Beat in the softened butter and egg, and beat together. Stir through the chocolate drops.
Divide the mix into 12 balls and place on a lighten baking tray. push down slight and bake in the oven for 8-10 minutes or until the cookies are golden and cooked through. Remove the cookies and cool so they are easy to handle.
Turn a cook inside down, stack with a giant marshmallow and using a blow torch, toast the marshmallow until hot and charring and oozy. Top with the melted chocolate and top with another cookie. Repeat until you have 6 s'mores.

S’mores Stuffed Cookies
Extra-large means extra delicious with these over-the-top S’mores Stuffed Cookies. Soft, chewy, and stuffed with chocolate, graham crackers and marshmallows, s’mores cookies are a fun twist on the campfire classic treat.

INGREDIENTS
1 1/3 cups salted butter softened
1 cup sugar
1 cup light brown sugar packed
3 eggs
2 tsp vanilla extract
3 1/2 cups all purpose flour
1 1/2 tsp baking soda
3/4 tsp salt
3 1/2 cups semi sweet chocolate chips
24 large marshmallows cut in half
6- 1.55 oz regular sized Hershey's Chocolate Bar broken into pieces
1 sleeve honey graham crackers broken into pieces
INSTRUCTIONS
Preheat the oven to 375 degrees. Line two large baking sheets with parchment paper. Set aside.
In a large bowl with a hand mixer combine butter, sugar, and brown sugar until creamy. Add eggs and vanilla. Beat until combined and fluffy.
In another large bowl add flour, baking soda, and salt. Whisk together.
Slowly add dry ingredients to butter mixture. Beat together until well combined.
Add chocolate chips and use a large spoon to gently combine.
Refrigerate cookie dough while you are preparing the S’mores ingredients.
Cut marshmallows in half. Break chocolate bars into rectangles, and then break the rectangles into smaller pieces. Break graham crackers into rectangles, and then into smaller pieces. You want everything to be small so it will fit into a cookie ball and not be too tall right in the middle of the cookie.
Scoop up about 3 tbsp cookie dough and flatten into a round circle. Layer graham cracker pieces, chocolate bar pieces, and the marshmallow on top. Add another 3 tbsp flattened piece of cookie dough to the top and form into a ball. Repeat steps making sure to space cookies out about 2 inches from each other.
Place the baking sheet with un-baked S’mores cookies in the refrigerator for 15-20 minutes before baking. Remove from the refrigerator and place immediately in the oven.
Bake at 375 degrees for 9-11 minutes, or until the marshmallow in the middle is melted and the cookie is starting to turn golden brown.
Remove from the oven and let sit 2-3 minutes before serving.

Betty's Kitchen S'mores Milk Chocolate Sandwich Cookies
Betty demonstrates how to make her quick and easy Kitchen S'mores Milk Chocolate Sandwich Cookies. These are the same flavor as cooked over a campfire, but they are done in the kitchen! They make a great (pickup) finger food dessert for your party--and easy, too!

Kitchen S'mores Milk Chocolate Sandwich Cookies
1 box graham crackers (any flavor)
1 small jar marshmallow creme
12 oz. bag milk chocolate chips
Assemble cookie sandwiches by spreading marshmallow creme on the flat side of one graham cracker and capping it (flat side down) with another identical graham cracker. Continue to make these sandwiches, placing them in one layer on a flat tray or dish until you have the number of cookies you want. Now, melt about half of the bag of milk chocolate chips in a double boiler until smooth and creamy. If you do not have a double boiler, just melt the milk chocolate chips in a saucepan over low heat, stirring often. Next, take one cookie sandwich at a time and dip it in the melted milk chocolate, coat it entirely, and remove it to a flat plate or tray covered with waxed paper. You may need two spoons to accomplish this, or tongs to remove the cookie. This procedure must be done quickly, so that the sandwich does not fall apart. Coat as many of the cookie sandwiches with the melted milk chocolate as you want for your purpose. When the tray of coated sandwiches is full, let it sit at room temperature for the coating to harden. You may speed this up by placing the tray in the freezer for 10 or 15 minutes. Remove the coated sandwiches from the waxed paper on the tray and place them on a serving dish. You may place them in layers, now that they are set. These cookies look and taste luscious! You (and your kids) will want to make them many times!!!
