1 cup cherry tomatoes
1 cucumber (diced)
8 oz pepper jack cheese (use whatever cheese you like)
1/2 red onion
2-4 boiled eggs
6 pieces thick cut bacon
10 oz spring mix
10 oz romaine lettuce
2-4 ears of corn
1/2 cup chopped candied pecans
salt, pepper, garlic, onion powder, chili powder
Avocado Ranch Dressing:
1 ripe avocado
1/2 cup sour cream
1/4 cup mayo
1 tbsp lemon juice
1 tbsp diced chive
1 tbsp dill
1 tbsp diced parsley
1/2 cup heavy cream or buttermilk

FOR SALAD
???? 8 oz chopped hearts of Romaine lettuce
???? 10 oz cherry or grape tomatoes
???? 1 bell pepper (any color), cored and sliced into rounds
???? 1 English cucumber, sliced into rounds
???? 2 shallots, sliced
???? pitted Kalamata olives, to your liking
???? Quality Greek feta blocks, to your liking
FOR THE LEMON-MINT VINAIGRETTE
???? 1/2 cup quality extra virgin olive oil (I used Greek Early Harvest EVOO)
???? 2 large lemons
???? 2 garlic cloves, roughly chopped
???? 20 to 30 fresh mint leaves, no stems (about 7 grams or so)
???? 1 tsp dried oregano
???? 1/2 tsp sweet paprika
FOR SALMON
???? 1 lb salmon fillet, cut into 4 equal pieces
???? Kosher salt and black pepper
???? Dried oregano (a generous pinch 1 1/2 tsp or more to your liking)

SALMON SALAD RECIPE
2 6-ounce cans wild salmon (I like wild planet)
1 stalk celery, diced
3 tablespoons red onion, diced
1 Persian cucumber, diced
2 tablespoons capers, chopped
2 tablespoons mayonaise
2 tablespoons plain Greek yogurt
1/4 cup fresh chopped herbs (I like dill and parsley)
salt and pepper to taste
INSTRUCTIONS
Drain the liquid for the salmon cans.
In a large bowl, combine salmon, celery, red onion, cucumbers, capers, parsley, dill, mayo, Greek yogurt, salt and pepper.
Stir to combine and enjoy!
If you want to keep this recipe dairy free, use all mayonnaise and skip the yogurt.
To keep the salad lighter, skip the mayo and use all Greek yogurt.
Salmon salad will last up to 3 days in your fridge when stored in an airtight container.
