How To make Sardinian Pasta with Tomato Basil
6 quarts water
(up to 8)
2 tablespoons :
plus 1 teaspoon
salt 1 pound imported ferula sarda grosso pasta
3 tablespoons extra virgin olive oil
1 cup plum tomatoes
1 teaspoon ground black pepper
6 basil leaves :
torn , (up to 8)
1 tablespoon butter
Bring water to a boil and add salt. Add pasta to the water and cook at a boil for 30 minutes.
While pasta is cooking, heat olive oil in a sauce pot and add the tomatoes over low heat. Season the tomatoes with salt and pepper and cook for 10 minutes before adding the basil leaves. Cook for an additional 5 minutes.
Drain the pasta in a colander and pour into a serving bowl. Stir butter into the tomato sauce and immediately add to cooked pasta. Stir well to fully coat the pasta. Serve the chicken over a bed of pasta.

FREGOLA SARDA TOSTATA
this pasta is very versatile. This is one way to prepare but this pasta works out very good in many dishes, great for pasta salads. Great bite! Now here we go..
Ingredients:
1 liter hot chicken stock
300 gr peeled tomatoes
200 gr fregola sarda
Salt en pepper to your taste
Olive oil
2 tbs tomato purée
1 small red onion shopped
Some spring of thyme ( you can use basil or other herbs you prefer)
2 cloves of garlic chopped
2 bay leaves
Bom apetite ????

Sardine Linguine Mediterranean Flavours
A very simple meal to make using canned sardines. The ones in brine are preferable, they create a seafood stock flavour which once cooked, tastes amazing! I use a dry white wine but you can replace with a seafood stock if alcohol is an issue. I use fresh pasta for a quick meal but of course you can also use dry pasta or linguine which works well too. Sardines are a very healthy fish which we should eat more often. A healthy meal with fresh ingredients and Mediterranean flavours. Enjoy sardine Linguine and happy cooking!

Paccheri with N'duja English Version - Isola Buona Sardinian & Italian Food
PACCHERI BIO WITH N’DUJA
Available in our online shop recipe pack:
Serves 4
Ingredients:
400g of organic paccheri
150g of n’duja
500g of cherry plum tomato
6/8 leaves of fresh basil
Pecorino tipo Fiore Sardo (to taste)
Sea salt (to taste)
Method:
Bring 4 litres of salted water to the boil
Take the skin off the n’duja
Cut the n’duja into cubes
Saute’ the n’duja for 5 min in a non-stick pan
Add the cherry plum tomato
Mix and let it cook for 10 min
Add the fresh basil (to taste)
Cook the paccheri for 12 min
Stir a couple of times throughout cooking
Grate the pecorino
Drain the pasta and add it to the sauce
Add some pecorino and stir for 3 min
Plate up
Sprinkle some grated pecorino
