Saucy Meatballs TERIYAKI
Meatballs teriyaki is a delicious combination of baked meatballs and sauce. I always serve them up with rice and a side dish of veggies. As I always say your family and friends will adore them. Give them a try and let us know what you think.
You can always alter the ingredients. For example, you can use ground pork or chicken, I just prefer beef. We use garlic powder but fresh garlic can be used as well. Onion powder would work okay too.

Meatball Ingredients
1 pound lean ground beef, I used 88%
1 pound ground pork
1 cup Panko breadcrumbs
1/2 cup teriyaki sauce, I used Soy Vay® Veri Veri
3 scallions, thinly sliced (about 1/4 cup)
2 large eggs, lightly beaten
Sauce Ingredients
1/2 cup teriyaki sauce
6 ounces pineapple juice
1 tablespoon cornstarch
Optional: sesame seeds and additional scallions for garnish
Instructions ⬇️
Preheat oven to 400°F. Prepare a baking sheet by lining with parchment paper.
In a large mixing bowl, combine all meatball ingredients. Mix well, do not over mix or you will have tough meatballs.
Using a 1 tablespoon scoop, portion out meat and place on baking sheet. After all meatballs have been scooped onto tray, roll into balls.
Bake for 10-12 minutes, until light golden brown and cooked through.
Meanwhile in a 10 skillet, warm teriyaki sauce over medium heat.
Combine pineapple juice and cornstarch in a resealable container.
Cover and shake to combine. Add juice mixture to sauce. Whisk to combine. Cook on medium heat until sauce begins to thicken.
Remove meatballs from oven and transfer to skillet. Toss meatballs in sauce.
Serve and enjoy.

Spaghetti Noodles:
- 1 LB Spaghetti (USE PASTA RECIPE FROM COOKBOOK )
Meatballs:
- 1lb ground beef
- 1/4 pound finely chopped ham (I used mortadella)
- 1/4 cup fresh grated pecorino or parmesan
- 3 cloves garlic, finely chopped
- 1 egg
- 1/2 cup panko bread crumbs, crushed tell mostly fine
- 1 1/2 teaspoon fine sea salt
- black pepper to taste
- 1 teaspoon finely ground fennel seed *optional*
Sauce and Assembly:
- 1/4 cup extra virgin olive oil
- 4 cloves garlic, thinly sliced
- 1 teaspoon red pepper flakes
- 1 28 oz can crushed tomatoes
- 1 bunch of basil *added near the end*
- chiffonade basil for serving
- fresh grated parmgiano for serving
- black pepper for serving
Saucy Mexican Meatballs Appetizer Recipe

You can serve up these Mexican appetizers with little slices of bread to dip into the flavorful sauce. Before you dive into making meatballs, preheat your oven to 350 degrees. In a large bowl, pour in 1/2 cup of Masa Harina and 1/4 cup of warm water. Masa Harina is just a corn-based flour you can use to create authentic Mexican cuisine for these homemade meatballs. Stir these ingredients together and add to them 1 pound of lean ground pork, 1 pound of lean ground beef, 1 beaten egg, four cloves of minced garlic, 1-1/2 teaspoons of salt, and 1/2 teaspoon of freshly ground black pepper. Use your hands to mix everything together well and begin forming them into 1-inch cocktail meatballs, using your palms to roll them together. This meatball appetizer recipe should create between six to eight dozen meatballs. Place them on a 15 x 10 x 1-inch baking pan and bake for 20 to 25 minutes. While the party meatballs are browning to perfection, let's get started on the sauce. In a food processor, pour in a 28-ounce can of whole tomatoes, juice and all, along with three drained Chipotle chili peppers in adobo sauce. Puree the peppers and tomatoes together, pressing it through a sieve over a small bowl once they're pureed to remove the tough skins. Pour 1 tablespoon of cooking oil into a Dutch oven over medium heat. Once the oil is heated, add to the Dutch oven 1/2 cup of finely chopped onions and two cloves of minced garlic. Cook until the onion is tender and add the meatball sauce, 1-1/2 teaspoons of instant chicken bouillon granules, and 1 teaspoon of ground cumin. Bring the sauce to a boil then reduce the heat to medium and let simmer uncovered for ten minutes. Add the meatballs to the Dutch oven to coat them and give them one last layer of flavor. This recipe for meatballs makes a large batch, making them perfect party appetizers to give your get together a bit of a fiesta flair!
