How To make Scandinavian Fish Salad
2/3 c Malt vinegar
2/3 c Water
3 tb Sugar
1 tb Pickling Spice
4 Fresh herrings, cleaned,
-filleted 1 1/4 c Sour cream
3 tb Mayonnaise
2 ts Dijon-style mustard
1 Onion, halved, thinly sliced
1 Green delicious apple
1 Red delicious apple
Red leaf lettuce leaves (opt 4 Green onion daisies (opt)
Fresh dill sprigs (opt) In small saucepan, combine vinegar and water. Add sugar and Pickling Spice. Bring to a boil, stirring to dissolve sugar. Boil 2 minutes; cool. Strain and discard spices. Cut herring fillets in 1/2"-wide strips and place in a shallow dish. Pour cold marinade over fish. Cover and marinate several hours or overnight. Drain herring strips. In a bowl, combine sour cream, mayonnaise, mustard and onion. Cut apples in fourths, remove cores and slice thinly (do not peel). Add sliced apples and herrings to sour cream mixture and mix together gently until coated with dressing. Arrange lettuce leaves on 4 plates. Spoon herring mixture on plates and garnish with green onion daisies and dill sprigs, if desired. Serve chilled.

As a lockdown activity, we did a video of this dish . Salmon is a particularly a good candidate for poaching because of its robust flavor. Also, poaching is a healthy way of preparing salmon that ensures that you maintain the natural juices of the fish. It's healthy because you aren't using any sort of fat or oil in cooking the way you would if you pan-fried the fillet. It's much easier to maintain the natural juices of the salmon because you are cooking the fish in a liquid, as opposed to exposing it to a hot, dry heat source such as an oven or a pan that can dry it out. Thankfully, it's also a quite simple undertaking!

This classic shrimp salad is a staple of Swedish cuisine
Recipe:

300g shrimp or prawns.
1 large spoonful mayonnaise
1 large sprig of dill
Lemon for serving or can be squeezed over
If the shrimp are not cooked, boil for up to 5 minutes, until cooked, and then cook off in ice water.
Chop dill.
Mix shrimp and mayonnaise, stirring in dill after. Garnish with dill. You can add some lemon or serve lemon on the side.
