1 tbs olive oil
1 tsp onion powder
1 lb ground turkey
1 red bell pepper, deseeded and diced
1 tsp dried oregano
1 tsp paprika
1 tsp ground cumin
½ cup shredded Mexican blend cheese
Fresh cilantro, chopped
Sour cream, shredded lettuce and/or low carb wraps for serving

GROUND TURKEY
1 lb lean ground turkey, I use 93/7. You can use ground beef if you prefer.
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp chili powder
1/2 tsp dried oregano
POTATOES
2 tbsp olive or avocado oil
4 cups diced potatoes, I prefer yellow or gold potatoes. But russet, sweet, or red would all work beautifully too!
8 oz canned tomato sauce
1/2 cup water
2 tsp garlic, minced
1 tsp dried oregano
1 tsp dried basil
1/2 tsp dried parsley
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp onion powder

—Dinner 1: Roast in the crockpot
I weight my cooked chuck roast as well as my potatoes to count the points.
I use Chuck roast, carrot sticks, and onion cut into large chuncks and cut up white potatoes. I mix a packet of ranch, a packet of Italian dressing mix and a packet of brown gravy all mixed with about a cup of water. I’m a rebel and don’t count them as points. I like to cook mine I. The crockpot on low for about 10 hours.
—Dinner 2: Turkey Spaghetti Bolognese
Serves 3. 8 points
1 zucchini
1 tbsp Italian seasoning
8oz ground turkey
14oz crushed tomatoes with basil
1 tsp better than bouillon chicken base
2 tbsp reduce fat sour cream
1/4 c Parmesan
Heat broiler to high. Bring a large pot of salted water to a boil. Wash and dry produce.
Trim and halve zucchini lengthwise; thinly slice crosswise into half moons.
Toss zucchini on a baking sheet and sprinkle with half of the Italian seasoning, salt, pepper and a spray of oil. Broil until browned and softened. About 5-7 minutes. (Watch carefully so you don’t burn it)
Meanwhile, heat a large pan over medium heat with a spray of oil and cook turkey with remaining Italian seasoning, garlic powder, onion powder, salt and pepper. Cook, breaking into pieces, until browned and cooked through, 4-6 minutes.
Once water is boiling, add spaghetti and cook according to packaging. Reserve 1/2 c of pasta water, then drain and set aside.
While pasta cooks, stir crushed tomatoes,stock concentrate, and sugar into pan with turkey. Season generously with salt and pepper. Bring to a simmer and cook until reduced. 5-7 minutes
Stir in sour cream and butter into pan with the sauce. Add drained spaghetti and zucchini; toss to coat. Stir in reserved pasta cooking water 1 tbsp at a time until pasta is thoroughly coated in sauce. Taste and season with salt and pepper. Divide among bowls and sprinkle with Parmesan. Enjoy.
—Dinner 3: cheesy Mexican Turkey and rice skillet
Serves 4. 9 points.
2 green peppers, any (poblano, hatch, bell)
2 yellow onion
4 tbsp sour cream
2 tsp hot sauce
1 lb ground turkey
2 tsp chili
1 tsp cumin
1 1/2 onion powder
1 1/2 garlic powder
6 tbsp tomato paste
2 tsp better than bouillon beef base
1 c jasmine rice
1 c reduced fat Mexican blend cheese
Preheat broiler to high. Wash and dry all produce. Halve, deseed, and cut green pepper in 1 inch pieces. Halve, pill, and diced onion. In a small bowl, combine sour cream, hot sauce, 1 tablespoon of water, and a pinch of salt.
Heat a pan over medium, high heat and spray withoil. Add ground, turkey, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Cook, breaking up the meat into pieces, until Browns and cooked through, 4 to 5 minutes. Remove from heat; transfer to a medium bowl.
Spray pan with oil again, add green pepper and onion. Cook, strength, until softened, 3 to 6 minutes.
Stir cooked turkey, tomato paste, better than bouillon, rice, 1 cup of water in to pan with the vegetables. Bring to a boil, then cover and reduce heat to simmer. Cook until rice is tender, About 15 minutes, uncover and remove from heat (After 15 minutes if your rice is not cooked at about 1 cup of water and cook for an additional eight minutes)
Evenly sprinkle cheese over the turkey and rice mixture. Broil until cheese has melted. About 1 minute.
Divide into 4 portions and drizzle with hot sauce Crema.
—Dinner 4: Gravy Smothered Meatballs with mashed potatoes and green beans
