How To make Smoked Salmon and Dill Waffles
4 tb Unsalted butter
1 3/4 c All-purpose flour
2 tb Double-acting baking powder
1 t Salt
1/4 t Freshly ground black pepper
2 c Milk
2 lg Eggs
5 oz Nova Scotia-style smoked
-salmon 1 md Onion, peeled & finely diced
1/4 c Snipped fresh dill
Softened cream cheese and finely chopped scallions or sour cream and salmon caviar for topping. Preheat your waffle iron. If you want to hold the finished waffles until serving time, preheat your oven to 200'F. Melt the butter; reserve. In a large bowl, whisk together the flour, baking powder, salt and pepper. In another bowl, whisk together the milk and eggs until well blended. Pour the liquid ingredients over the dry ingredients and whisk gently to combine. Fold in the salmon, onion, dill and melted butter. Lightly butter or spray the grids of your iron, if needed. Brush or spray the grids again only if subsequent waffles stick. Spoon out 1/2 cup of batter (or the amount recommended by your waffle maker's manufacturer) onto the hot iron. Spread the batter evenly over the grids with a metal spatula or wodden spoon, stopping right before the edge. Close the lid and bake until golden and crisp. Serve immediately or keep the waffles, in a single layer, on a rack in the preheated oven while you make the rest of the batch. To serve: Add a scoop of cream cheese and a sprinkling of chopped scallions or a generous spoonful of sour cream and some salmon caviar.

Green waffles made from spinach. You heard me right. These savory spinach waffles are a great low carb appetizer or lunch option, paired with smoked salmon, cream cheese and avocado.
Plus green waffles just look kinda cool, right? Or weird? Or interesting? ????♀️
If you're looking for a low carb option, this is a great pick for lunch. You could even serve it as small bites: a snack on game day or appetizer at a fancier party.

Spinach Waffles with Salmon
(Makes 2 big waffles - enough for 2-3 people or works as a snack for more)
150g frozen spinach (weighed while frozen)
1 dl water
1 tbsp extra virgin olive oil
1/2 tsp salt
2 dl steel cut oats
3 eggs
Cream cheese
1 small package of smoked salmon
1 avocado
Pepper
Lemon wedges
Defrost the spinach. This is quickly done by putting it in a bowl and adding half cold water, half boiling water.
Add the spinach, water, olive oil, salt, oats and eggs to a bowl or blender. Make sure to squeeze the spinach to get rid of excess water. I'm using a hand mixer, which works perfectly for this recipe. Blend until smooth.
In the meantime, heat up your waffle iron. Pour in half the batter and cook until done. It shouldn't really be brown, just done. Put the waffle to a side and repeat with the remaining batter.
Once both waffles are done, smear on cream cheese. Layer on smoked salmon and avocado slices. Season with freshly ground pepper and serve with lemon wedges on the side. A sprig of dill could also be delicious to add.

BETH’S EASY SALMON ROULADE RECIPE
Serves 1
INGREDIENTS:
1 bunch watercress
Drizzle of Olive Oil
Sat & Pepper to Taste
2 tbsp (30 ml) cucumber, peeled and diced
1 radish, diced
3 tbsp (45 ml) Boursin Cheese
3 large slices of smoked salmon
fresh dill or parsley
2 lemon wedges
METHOD:
Place watercress on a plate to form a base. Drizzle with olive oil and season with salt and pepper
Dice cucumber and radish into tiny cubes. Lay out salmon, overlapping to form a triangle or rectangular.
Spread cheese on top of salmon, in the center. Top cheese with cucumbers and radishes. Roll up to form a log. Place salmon log on center of watercress bed.
Squeeze lemon wedge on top of salmon, add freshly cracked pepper.
Top with fresh dill or parsley.
Enjoy!
