How To make Sour Cream Blueberry Cake
1 1/2 c Flour
1/2 c White sugar
1 1/2 ts Baking powder
1/2 c Butter
1 Egg
1 ts Vanilla
4 c Blueberries
2 c Sour cream
1/2 c White sugar
2 Egg yolks
1 ts Vanilla
Blend first four ingredients, then add egg and vanilla. Pat in a 10" springform pan. Place blueberries on top of cake. Mix remaining ingredients and pour over berries. Bake at 375 F approxiamtely 60 to 70 minutes, or until edges are lightly brown. Serve with whipped
cream.

Crust:
1 ½ cups flour
½ cup sugar
½ cup butter
1 ½ teaspoons baking powder
½ teaspoon salt
1 egg
1 teaspoon vanilla
Filling:
3 cups blueberries
2 cups sour cream
½ cup sugar
1 egg
1 teaspoon vanilla
Topping:
8 tablespoons flour
2 tablespoons sugar
3 tablespoon cold butter
Combine flour, sugar, baking powder, and crumble in cold butter with your hands until pea sized. Add in egg and vanilla and mix until combined, keep crumbled so it’s easy to spread out in the pan.
Spray a 10” springform pan and press the crust into the bottom.
Spread blueberries evenly on top of the crust
Combine sour cream, sugar, egg and vanilla, mix until smooth. Pour over blueberries
Bake at 350F for 30 minutes.
While the cake is in the oven mix 8 tbsp of flour, 2 tbsp of sugar and 3 tbsp of cold butter for the crumble topping. Put in fridge until ready to use.
After 30 minutes, add the crumble topping evenly over top of the cake. Put back in the oven for another 20 minutes.
When it is done it will still be jiggly in the center.

Recipe ingredients
- 125g butter, softened
- 2 teaspoon lemon zest
- 1 cup white sugar
- 3 eggs (we use Woodland Free Range)
- 1 cup Edmonds flour, plus 1 tablespoon
- 1 teaspoon baking powder
- ½ cup sour cream
- 1/2 cup frozen blueberries
Drizzle topping:
1/2 cup icing sugar
Juice of half a lemon
Water for consistency
Cooking method
1. Preheat oven to 160 degrees Celcius. Grease and line a 20cm round cake ring tin.
2. Beat the butter, lemon zest, sugar and eggs together until light and fluffy.
3. Sift 1 cup flour and baking powder together. Fold sifted ingredients into egg mixture alternately with sour cream, mixing until smooth.
4. Toss frozen blueberries with 1 tablespoon of flour and gently fold through the cake mix batter.
5. Pour mixture into the greased cake tin.
6. Bake for 30-35 minutes or until cake springs back when lightly touched.
7. Leave in tin for 5 to 10 minutes before turning out onto a wire rack to cool.
8. When cooled, drizzle a mixture of icing sugar, lemon juice and a little water.
