Bring taco night back to the house with this healthy meal. Serve with Pico de Gallo or Tomatillo Salsa for added Mexican flavor. Learning to prepare this recipe teaches students grilling techniques, as well as knowledge about Mexican spices and basic salsas. Thigh meat makes these tacos especially moist, but you can use breast meat instead. Serve with Pico de Gallo or Tomatillo Salsa.
Yield: 4 servings (serving size: 3 tacos)
Preparation
Prepare grill.
Combine first 4 ingredients in a small bowl; rub spice mixture over chicken.
Place chicken on grill rack coated with cooking spray; grill 10 minutes on each side or until done. Let stand 5 minutes; chop.
Heat tortillas according to package directions. Divide chicken evenly among tortillas; top each tortilla with 2 tablespoons cabbage and 1 teaspoon cheese. Serve with sour cream, if desired.

You can fry the bread first then shape it as a taco
Ingredients:
4 1/2 cups all-purpose flour
1 3/4- 2 cups hot water
2 tbsp shortening
4 tsp baking powder
Salt I used 1 1/2 tsp
Oil for frying
2 lbs ground beef (I'm using 96/3) season with garlic salt, black pepper, and salt
4 hatch or anaheim peppers you can also use 2 poblanos instead
chile serranos I'm using 3
1 small white onion; divided
4 roma tomatoes
2 garlic cloves
2 tsp chicken bouillon
1/2 tsp black pepper
1/2 tsp ground cumin
1/2 tsp ground coriander

How To Make Ground Beef Soft Tacos With Mission Soft Taco Flour Tortillas

Cook time: 15 mins
Serves: 6
INGREDIENTS
6 Mission Soft Taco Flour Tortillas:
1¼ pound Lean Ground Beef
1 Taco Seasoning Mix
½ cup Water
¾ cup Packaged Iceberg Lettuce, shredded
¾ Pico De Gallo prepared
¾ cup Shredded Pepperjack Cheese
INSTRUCTIONS
Heat a non-stick, medium size sauté pan over medium-high heat; on the stove top. Place raw ground beef into pan and brown (approximately 5 minutes); then drain. Place drained cooked beef back into the non-stick sauté pan, add taco seasoning and water. Continue to cook until water is gone and beef is thoroughly mixed with seasoning. Reserve warm.
Fill each tortilla with approximately ¼ cup of reserved taco meat, top with 1 tablespoon of lettuce, 1 tablespoon of pico de gallo and 1 tablespoon of shredded cheese.
