How To make Spaghetti with Green Tomatoes

1 pound Green tomatoes
1 pound Spaghetti
5 Cloves garlic -- minced
3 tablespoons Extra-virgin olive oil
Salt/freshly ground pepper 1/4 cup Or more freshly grated
Parmigiano-Reggiano
Bring water for cooking the pasta to a boil in large pot. Drop in the tomatoes. Cook for about 15 to 20 seconds. Remove; let cool. Keep water boiling. Add 2 tablespoons salt and the pasta. As it cooks to al dente, peel, seed and coarsely chop tomatoes. Heat a skillet, add the olive oil, and in the oil cook the garlic until just softened and fragrant. Add tomatoes and increase heat. Cook 3 to 4 minutes or until the tomatoes start to get soft. Add salt and pepper to taste. Combine the cooked pasta with the tomato sauce, toss, add Parmesan and toss again. Enjoy! The process is a laborious one that takes several hours, from handpicking each tomato to adding basil leaves into jars one by one. This year, the family has turned more than 200 kilos of tomatoes into sauce.

Orzo Pasta with Tomatoes, Basil and Parmesan
We’re in love with this easy orzo pasta recipe. There’s quick-to-cook orzo, tomatoes, basil, parmesan, and lots of garlic. Get this easy pasta on the table in less than 20 minutes! ⬇️ Recipe Ingredients are below ⬇️
• 8 ounces dry orzo pasta, substitute with any pasta variety
• 3 tablespoons olive oil
• 1 tablespoon minced garlic (3 to 4 cloves)
• 1/4 to 1/2 teaspoon crushed red pepper flakes, depending on how spicy you like the pasta
• 12 ounces tomatoes, chopped (2 medium or 12 to 15 cherry tomatoes)
• 1/2 cup shredded parmesan cheese, plus more for serving
• 1 cup basil leaves, torn into pieces
• Salt and fresh ground black pepper, to taste

8 LB GREEN TOMATOS
3 LARGE ONIONS
3-4 JALAPENO PEPPERS
6 GARLIC CLOVES
ROAST AT 450F FOR 30 MIN, TURN AFTER 15 MIN

2 TEASPOON SALT (OR TO TASTE)
1 TEASPOON BLACK PEPPER
1 CUP LIME JUICE (OR WHITE VINEGAR)
1/2 TEASPOON CUMIN
1/2 CUP FRESH CHOPPED CILANTRO (OR 2-3 TABLE SPOONS FRY)
