How To make Spicy Stir Fried Fish
4 dried mushrooms
2 cups peanut oil
1 pound whitefish fillets
2 tablespoons tomato sauce
2 tablespoons red pepper flakes
1/4 cup bamboo shoots
drained and chopped
1 tablespoon rice wine
1 tablespoon sugar
1/2 teaspoon salt
1 tablespoon soy sauce
2 teaspoons cornstarch
2 tablespoons green onions :
chopped
Soak mushrooms for 10 minutes in warm water, drain, and chop. Heat oil in a wok. When it is very hot, add fish and fry until lightly browned. Remove to warm dish and pour off all but 2 tablespoons of oil. Add tomato sauce, pepper, bamboo shoots, and mushrooms. Cook, stirring for 3-4 minutes, until mushrooms soften. Add wine, sugar, salt, and soy sauce and stir mixture for 30 seconds. Return fish to pan and turn it over in the sauce. Dissolve conrstarch in 1 tablespoon water and add to wok. Stir gently just until sauce thickens. Pour onto serving dish and garnish with onions.

This Chinese Braised Fish goes very well with steamed rice or plain porridge. Some of you may be hesitant to cook a whole fish at home because it tends to stick to the pan or wok. All you need to do is to heat your pan properly to prevent your fish from sticking to the pan or wok. If you move the fish when you just put it in the wok, the skin will break. Simply leave the fish alone for a few minutes to let the crust form. Various cooking techniques can be used to prepare fish in Chinese cuisine. In this recipe, Roland used braising, a cooking method that combines wet and dry heats. Typically, the food is seared at a high temperature before being simmered in a covered pot in cooking liquid. How to make spicy stir-fried fish cakes.

Ingredients:
2 cups of fish cakes, half an onion, 2 cloves of garlic, 1 green onion, 1 green chili pepper, 2 tbshot pepper paste, 1 -2 tbs corn syrup (or 1 tbs sugar), 1 tbs of vegetable oil, sesame oil, andsesame seeds.
1. Cut fish cakes into 2 cups worth of bite sized pieces.
2. Slice half an onion (¼ cup), mince 2 cloves of garlic, chop up 1 green onion and a green chili pepper. Set them aside on your cutting board or a plate.
3. Add 1 tbs of vegetable oil to a heated pan.
4. Add fish cakes to the pan and stir them for a few minutes until they look golden brown.
5. Add the sliced onion, minced garlic, and chopped green chili pepper to the pan. Stir them with the fish cakes for a minute.
6. Add 2 tbs hot pepper paste and 1 -2 tbs of corn syrup (mulyeot in Korean).*tip: hot pepper paste is easily burned, so lift the pan up and down to control the heat after you add the hot pepper paste.
7. Turn off the heat and add 1 ts of sesame oil, 2 ts of roasted sesame seeds and 1 chopped green onion.
