About Pide
İçli Pide (Turkish: İçli Pide) is a savory dish of Middle Eastern origin consisting of a usually round, flattened base of leavened wheat-based dough topped with tomatoes, cheese, and often various other ingredients (such as meat, kaşar, beyaz peynir etc.), which is then baked at a high temperature, traditionally in a wood-fired oven. A person who makes pide is known as a pideci.
Gozleme: the Turkish bread stuffed with feta and spinach!
INGREDIENTS
For the dough:
375g (3 cups) of flour
180ml (3/4 cup) of water
70ml (1/3 cup) of extra virgin olive oil
1/2 tsp of salt
For the spinach filling:
300g of baby spinach
2 cloves of garlic
2 eggs
Pepper
Salt
300g of feta cheese
Mozzarella cheese
METHOD
1. In a bowl add the flour, water, extra virgin olive oil, and salt and mix with a spatula. When the dough starts to form knead with your hands to obtain a smooth dough. Cover with cling film and let it rest for 20 minutes.
2. In a bowl with spinach add the garlic, eggs, pepper, salt, and feta cheese and mix all well with a spatula.
3. After time has elapsed cut the dough into 4 pieces and roll out each piece to obtain the rectangle shape.
4. Spread the prepared filling on the half-rolled dough, pushing to the edge. Sprinkle with mozzarella and fold another side of the dough. Press down the edges to close it well on all sides.
5. Pour the olive oil into the pan and transfer the golzeme. Cook, lightly pressing down, until deep golden and crispy. Flip and cook, pressing down lightly, until crispy.

Ingredients:
For the dough:
3 cups (375g) Flour
1 teaspoon Salt
3/4 cup (180ml) Milk
1/3 cup (80m) water
For the filling:
Olive oil
1 Onion, chopped
400g Spinach
300g Feta cheese
Salt to taste
Pepper to taste
Directions:
1. Make the dough: in a large bowl mix flour and salt. Add water, milk and mix until dough is formed. Knead the dough for 4-5 minutes, until smooth and soft. Place the dough in a bowl, cover and allow to rest while making the filling.
2. Make the filling: in a pan, heat 2 tablespoons of olive oil, add chopped onion and sate for 5-6 minutes. Add chopped spinach and cook until wilted.
3. Transfer the filling into a large bowl, crumble feta cheese and season with salt and pepper to taste. Mex well.
4. Make the Gozlame: take the dough and divide it into 6 equal parts and shape each part into a ball.
5. Roll out each ball into ball into a thin rectangle. Place 2-3 tablespoons of filling the center of the dough, leave about4cm of space around the edges. Fold the edges over the filling.
6. Fry the Gozlame: heat a large skillet or a pan over medium-high heat, place the gozlame on the skillet and cook until golden brown on both sides. Brush each side with a bit of olive oil or melted butter (optional). Repeat with the rest of the dough and filling.
7. Serve and enjoy!
