How To make Sweet Onion Quiche
1 Pie crust, unbaked
1/4 c Evaporated milk
3/4 c Onions, chopped
3 Eggs
1/2 c Ham, diced
1/2 c Sour cream
3 tb Butter
1/2 c Crumbled bacon
1 1/2 c Mild American cheese, grated
1 c Swiss cheese, grated
1 c Caraway seed cheese, grated
Melt butter in skillet; saute onions and ham until done. Place in bottom of unbaked pie crust. Mix cheese, milk, eggs, and sour cream and pour over onion and ham mixture. Bake at 350 degrees for 30 minutes; garnish with crumbled bacon. Source: Rock Springs Sweet Onion Festival Cook Book 1992

Vegetarian Sweet Onion and Herb Quiche
Ingredients:
2 tablespoons butter
3 large onions, thinly sliced
1 teaspoon sugar
1 prebaked pie crust
4 eggs
1 cup milk
1/4 cup chopped parsley
1/8 cup chopped chives
2 tablespoons grainy Dijon mustard
2 ounces Camembert, diced
1 cup shredded mozzarella
Salt and pepper
Directions:
1. Preheat the oven to 350 degrees.
2. Heat the butter in a skillet and add the onions and sugar.
3. Cook over low heat, stirring occasionally until the onions are deeply browned and caramelized, about 20 to 25 minutes. Set aside to cool.
4. Place the prebaked pie crust into a pie pan and spread the onions over the bottom.
5. Whisk together the eggs, milk, herbs, and mustard until smooth. Mix in the camembert and pour over the onions.
6. Top with the shredded cheese and bake for about 45 minutes, or until the cheese on top is bubbly and brown and the center is just set.
7. Set aside for 15 minutes to cool before serving.
8. Pro tip: Use a tart shell instead of a pie crust.

Join my online French cooking classes ????????: in this video we look at how to make a French quiche from scratch, step by step. today we are making a leek and onion quiche as well as a mini quiche lorraine. its easy versatile and delicious.
Ingredients:
250 grams of homemade shortcrust pastry see video below
For the filling:
2 whole eggs
2 egg yolks
250 ml of full cream milk (whole milk)
250ml of pure cream at least 45 % fat content (heavy cream)
seasoning: a pinch of salt,cayenne pepper and nutmeg.
the filling is the same for any type of quiche, only the garnish changes so feel free to experiment. ( be careful not to use ingredients containing too much water)
For the garnish:
Leek and onion quiche
1 leek
2 brown onions (sweet onions)
2 teaspoon of unsalted butter to cook the onions and leek.
Quiche Lorraine:
250 grams of pan fried smoked pork belly or pancetta finely sliced
200 of gruyere cheese or swiss cheese or cheddar (last resort)
a bit of oil to fry the bacon

▢1 ½ cup (190 g) All-purpose flour
▢½ teaspoon Salt
▢4 oz (113 g) Unsalted butter (chilled and cut into cubes)
▢1 large Egg yolk
▢2 tablespoon Water
Quiche filling
▢½ cup (60 g) Ricotta cheese
▢½ small Garlic (finely minced)
▢2 tablespoon Olive oil
▢2 large Caramelized onions (thinly sliced)
▢2 - 3 large Roasted red peppers
▢½ cup Parsley (finely chopped )
▢½ cup (60 g) Cheddar cheese
▢½ cup (120 g) Gruyere or Gouda cheese
Custard
▢3 large Eggs
▢2 tablespoon All-purpose flour
▢½ cup (60 g) Ricotta cheese
▢½ cup (120 ml) Heavy cream (or half/half)
▢½ cup (120 ml) Whole milk
▢¼ teaspoon Kosher salt
▢¼ teaspoon Black pepper
