The Perfect Lockdown Recipe? Glass Noodle Stir-Fry (Pad Woon Sen)
After a month of lockdown, I've thought a lot about what a perfect lockdown dish would be. I came up with 5 distinct qualities the dish must have, and this classic homey recipe ticks ALL the boxes. Glass noodle stir-fry or pad woon sen is quick, easy, flexible, inexpensive, uses ingredients that last a long time, and most importantly, it's delicious! It's also really kid friendly as Baby Kaan can attest :)

Spicy Glass Noodle Salad Recipe (Yum Woon Sen) | Thai Girl in the Kitchen
Today's recipe is one of Thai spicy salads.
'Yum Woon Sen' or Spicy Glass Noodle Salad.
Most Thai salads that includes the word 'Yum' will be packed with the flavors of spicy, sour, salty, sweet and umami along with several herbs to fresh the dish up.
In this video, we're making 'Yum Woon Sen Talay'.
The word 'Talay' itself means 'Sea/Ocean' but when being included in any Thai menu name, it refers to 'seafood'.
And of course, if you're allergic to seafood you can substitute with something else such as sausages, Vietnamese sausages, meatballs, tofu or even leave it as simple as ground pork/beef/chicken.

????Spicy Glass Noodle Salad Recipe (Yum Woon Sen) | Thai Girl in the Kitchen
- 100g Glass noodles
- 5-6 Shrimps
- 1 cup Squid rings
- 80g Ground pork/chicken
- 6 tbsp Lime juice
- 4 tbsp Fish sauce
- 2 tbsp Palm sugar (Can substitute with granulated sugar)
- 1 tbsp Sriracha (Optional)
- 1/2 Onion
- Tomato
- Fresh chili as much as you want (Can use either bird eyes chili or Thai chili)
A little bit of….
- Cilantro
- Spring onion
- Celery (In the video, I use Chinese celery which is smaller, more leafy and stronger flavor. However, if you can’t get Chinese celery, you can use the leaf parts from celery you can get)
If you want the extra texture and nutty flavor, you can also top it up with roasted peanuts or cashew nuts or both!

Yum Woon Sen (Thai Glass Noodle Salad) is a popular Thai salad dish. The word “Yum” literally translates to “mix or toss”, which refers to a type of Thai salad. While “Woon Sen” means “glass noodles”.
Thai Glass Noodle Salad is my favorite Thai salad. It’s the perfect summer dish that everyone must eat.
Thai Glass Noodle Salad Recipe Written Recipe:

Cook time: 20
For the glass noodle salad:
6 ounces glass noodles
1 tablespoon avocado oil, or oil of your choice
5 tablespoons peanuts
3 tablespoons dried shrimp
½ pound shrimp, peeled and deveined
¼ pound ground pork
1 tablespoon fish sauce
½ small onion, sliced into thin slices
1 medium shallot, sliced into thin slices
2 stalks Chinese celery, sliced into thin slices, or replace with regular celery
8 small grape tomatoes, halved
¼ cup cilantro, chopped
For the dressing:
7 tablespoons lime juice
6 tablespoons fish sauce
1 ½ tablespoons palm sugar, or replace with granulated sugar
4 medium bird’s eye chilies, minced
3 garlic cloves, minced

20g cilantro, use the stem portion here to craft the sauce, reserving the leafy part to be mixed into the salad

210g (with shell) or 140g (without shell) prawns
160g squid
200g pork, minced
1 tbsp fish sauce
