THIN MINT CHOCOLATE CAKE...a decadent moist cake with a buttery creamy mint filling all smothered in chocolate glaze!! BEST CAKE EVER!! Recipe below...
THIN MINT CHOCOLATE CAKE
Preheat oven to 350 degrees F.
Lightly grease and flour (1) 9-inch cake or use cooking spray pan. Set aside.
CAKE
1-1/2 cups all-purpose flour
3/4 cup granulated sugar
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/3 cup vegetable oil or substitute with canola or coconut oil
1 tablespoon cider vinegar
1/2 teaspoon mint extract
1/2 teaspoon pure vanilla extract
FILLING
1/2 cup (1 stick/8 tablespoons) butter, at room temperature
1-1/2 cups powdered sugar
1/4 teaspoon mint extract
1/4 teaspoon pure vanilla extract
1/4 teaspoon salt
2 tablespoon coconut milk or substitute with half-and-half
1-2 drops green food coloring, optional
GLAZE
1/2 cup coconut milk or substitute with half-and-half
1-1/4 cups semisweet chocolate chip
Pinch of salt
1. For the cake part whisk together all dry ingredients. Set aside.
2. In another bowl add all wet ingredients for cake. Whisk. Pour wet ingredients over dry ingredients. Whisk until well blended and smooth.
3. Pour into prepared baking pan.
4. Bake in preheated oven for 25-30 minutes or until toothpick inserted in center come out clean.
5. Cool cake in pan on cooling rack for 10 minutes before removing. Cool cake completely, about 1 hour.
6. Meanwhile, to prepare filling: In a medium mixing bowl add butter. Beat on high-speed for 1 minute. Add half of powdered sugar. Beat for an additional 1 minute. Add remaining powdered sugar, mint extract, vanilla extract, coconut milk, and salt. Beat on high-speed for 3 minutes, scraping down sides of bowl, until light and fluffy. Cover. Set aside until ready to assemble.
7. To prepare glaze: Add coconut milk in a microwave-safe bowl. On high microwave for 1 minute. Add chocolate chips into hot coconut milk. Whisk until smooth and glossy. Cool for 5 minutes.
8. To assemble cake: Using a serrated knife, cut cooled cake in half horizontally. Place bottom layer, cut-side up, on a serving plate. Spread evenly with the mint filling and top with the other layer, cut side down. Press gently until mint filling can slightly be seen around edges of cake.
9. Slowly pour CHOCOLATE GLAZE evenly over cake. Chill cake in refrigerator to set glaze quickly.
TIPS: Store in an airtight container up to 2 days in the refrigerator.

This is a chocolate cake with a mint chocolate Swiss meringue mock mousse, thin mint cookies, and chocolate ganache filling. My husband isn’t a thin mint fan but he fell in love with this cake!

Chocolate Thin Mint Christmas Cookies

If you like a chocolate-coated peppermint candy, you will love these cookies. It's two chocolaty cookies rolled in sugar, sandwiched in a peppermint candy which melts just enough to create a perfect filling. These are simple, easy, and make a small batch. A great addition to any cookie plate!

INGREDIENTS
- 6 oz semi-sweet chocolate
- 2 cups flour
- 1/2 cup sugar
- 2/3 cup butter, room temperature
- 1/4 cup corn syrup
- 1 egg
- 1/2 tsp salt
- 2 tsp baking soda
- 25 thin mints
INSTRUCTIONS
Melt chocolate in the microwave and set aside to cool slightly. In the bowl of an electric mixer, beat melted chocolate, butter, corn syrup, egg, and sugar on low speed until well incorporated. Sift together flour, salt, and baking soda. Slowly add dry ingredients to mixer running on low speed. Increase speed to mix until just combined. Chill dough in an airtight container for at least two hours or overnight.
Using a small cookie scoop or tablespoon measurer, make small balls of dough. Roll in sugar and place on a parchment-lined or ungreased baking sheet. Put in a preheated 350-degree oven for 10-12 minutes, until set but slightly soft in the middle of the cookie.
Let set on pan for two minutes. While warm, turn half of the cookies upside down. Place thin mint on top and immediately set another cookie on top, creating a sandwich. Let thin mint melt then twist and gently push cookies together. This spreads the thin mint to the edges and seals the sandwich.
Let cool completely and enjoy!

Like many families in America, one of our favorite indulgent treats was that special time of year when the Girl Scouts came around selling Girl Scout Cookies and there was one cookie in particular that we just had to have: Thin Mints. There was something about Thin Mints that once you opened the box and started eating them you just had to continue until the box was gone. But alas Thin Mints are loaded with junk ingredients so I have conjured up this decadent rendition of Thin Mint flavor in a heavenly plant based cake! This cake is vegan, refined sugar & oil free, and gluten-free and made in three layers so it is like eating three Thin Mint cookies all at once.
