How To make Tod Man(Thai Fish Cake)
FISH:
2 lb Minced fish
1 t Salt
1/2 c Red curry paste
1 ea Egg
1 T Nam pla
1 c Finely chopped green bean
2 ea Basil leaves, finely
-chopped Vegetable oil CUCUMBER SALAD:
1 c English cucumber, cut in
-fourths & sliced 3 ea Shallots, sliced thinly
1 ea Red hot chile pepper, sliced
2 T Sugar
1 T Vinegar
1 t Salt
1/2 c Hot water
Fish: in food processor mix to a past the fish, salt, curry paste, egg and nam pla. Form paste into balls with hand. Fold in green bean and basil. Flatten each piece into 2 inch circles. Heat oil over medium heat. Fry fish until light golden in color. Dry on paper towel. Serve with cucumber salad. Salad: in a serving bowl, arrange cucumber, shallot and chile in layers. Mix sugar, vinegar and salt. Add hot water; stir until sugar dissolves. Pour over cucumber mixture.

Ingredients:
400 grams of fillet fish cut into a small cube (any fish that can easily remove the skin and bones)
1 cup of Wheat Flour
1/2 cup of rice flour
10 pieces of kaffir lime leaves (chopped)
6 tbsp of Thai red curry paste
6 tbsp cooking oil
1 large egg
1 tbsp of baking powder
1 tbsp of salt
1 tbsp of sugar
1 cup of water (may not use all as it depending on the texture of fish cake mixture)
6 stalks of long bean (or 18 stalks of French beans)

● 1 Egg
● 300g Tender fish meat (like basa, catfish, or cod)
● 1 tsp Cooking oil (for a mix with the fish cake)
● 1 cup Cooking oil (for cooking)
● 2 Tbsp Red curry paste
● 1 cup Thai holy basil leaves (or Thai sweet basil)
● ⅓ cup Yardlong bean, thinly cut
● ⅓ cup Kaffir lime leaves, thinly sliced
● 1 tsp Fish sauce
● 1 tsp Sugar
» Sauce
● 1 Tbsp Red chilies, pounded
● 1 Tbsp Fish sauce
● 2 Tbsp Palm sugar
● 2 Tbsp Tamarind juice
● 2 Tbsp Roasted peanut, pounded
● 2 Tbsp Cucumber, sliced
● 1 Tbsp Cilantro, chopped

Quantities :
Minced pork - 550 g
( lean minced pork won't be as nice, make sure there's fats in there )
Crispy flour - 3 tbsp
Long bean - 100 g
Kaffir lime leaves - 9 leaves
Fish sauce - 2 tbsp
Eggs - 3
Sugar / palm sugar syrup - 1 teaspoon
Red curry paste - 2 tbsp
- How To -
Prep
1) Combine red curry paste and the minced pork together
2) Add in all of the seasoning ingredients. Combine everything
3) Add in the flour, sliced long bean and sliced kaffir lime leaves
4) Let sit in fridge of 30 mins.
Frying
1) Add adequate vegetable oil into the pan
2) Form the mixture into patties using your palm
3) Flip when golden brown
4) Use your turner to flatten them further more
5) Remove when done
