How To make Tomato Verde Con Questo (Green Tomatoes with Cheese)
2 tb Butter
1 md Onion, very finely chopped
1 Clove garlic, finely chopped
1 10 oz can Mexican green
-tomatoes, drained 1 c Green chilies, chopped and
-peeled 12 Sprigs of fresh coriander,
-chopped Salt Freshly ground pepper 1/2 lb Cream cheese
3/4 c Heavy cream
Heat the butter in a skillet, add the onions and garlic, and saute' until the onion is tender. Add the tomatoes, chilies, coriander, and salt and pepper to taste. Simmer very gently for 10 minutes, uncovered. Add the cheese; when it begins to melt, add the cream; and cook just long enough to heat through. - Dill mayo (see below)
- Havartti Dill Cheese
- Romane Lettace (shredded)
- Fried green tomato (see below)

Dill Mayo:
- Three (3) heaping tsp of mayo
- Three (3) heaping tsp of sour cream
- 1/4 cup fresh chopped dill
- One (1) tbsp dill pickle juice
- 1/4 tsp kosher salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1/4 tsp smoked paprika
Fried Green Tomatoes:
- 3 to 4 green tomatoes (cup into 1/4 inch slices)
- One (1) cup corn meal
- 1/2 cup breadcrumbs
- Two (2) eggs
- 1/2 cup buttermilk
- 4 dashes of hot sauce
- 1 1/2 cups flour
- One (1) tsp kosher salt
- One (1) tsp black pepper
- One (1) tsp cajun seasoning

EASY Green Tomato and Herb Pasta Topping
Here's a simple and delicious way to use the extra green tomatoes left from the garden. The sauce cooks in minutes, so start the pasta water right away and the sauce will be done on time! Enjoy! Judi
EASY Green Tomato and Herb Pasta Topping
Makes 2 to 4 Servings
2 Tbsp lemon juice
Salt to taste
1 to 1-1/2 Tbsp extra virgin olive oil
2 cups chopped green tomatoes
1/2 c diced onion
4 cloves garlic, minced
1-1/2 tsp dry basil leaves
Heat a skillet over medium heat. Add olive oil and allow it to heat up very briefly. Then add onion and garlic and allow them to sauté for about 1 minute. Add tomatoes and remaining ingredients. Stir; place cover on skillet. Allow to simmer 3 to 5 minutes, until tomatoes are at desired consistency. Serve immediately over cooked pasta. This topping would be excellent topped with grated Parmesan cheese.
Note: Since this topping takes so little time to cook, go ahead and start heating the water for the pasta as you prepare the ingredients for the topping. They should both be done about the same time. Enjoy! jk
