Trail Mix Cereal Treats
Total: 1 hr

Yield: 24 treats

Directions
Special equipment: 1 24-cup or 2 12-cup mini muffin trays
Grease a 1/4 dry measuring cup and the cups the muffin tray with butter.
Melt the butter in a large pot over medium heat. Add the marshmallows and a large pinch of salt and cook, stirring occasionally, until the marshmallows melt completely, about 5 minutes. Remove from the heat. Add the cereal, almonds, raisins and sunflower seeds and stir with a rubber spatula, making sure to scrape down to the bottom, until the cereal is completely coated. Let the mixture cool for a few minutes and then quickly fold in the candy.
Use the prepared measuring cup to mound the mixture into the cups of the prepared muffin tray. Pat the domes together gently to help the treats hold their shape. Let sit at room temperature until firm, about 30 minutes.
Store at room temperature in an airtight container for up to 3 days.

1/4 cup salted and roasted sunflower seeds
1/2 cup candy-coated chocolate candies, such as M&M's

A Delicious and Healthy Trail Mix Cookie Recipe
Kimberly Macy, the Executive Pastry Chef at Miraval Resort and Spa, shows us how to make these delicious trail mix cookies. GET THE RECIPE BELOW:
Makes about 3 dozen cookies:
INGREDIENTS:
4 Tbsp butter, softened
1/2 cup light or dark brown sugar
1/3 cup raw cane sugar
1/2 cup honey or agave nectar
2 egg whites
1 cup all purpose flour
1/2 tsp baking soda
1/4 tsp kosher salt
2 cups rolled oats
1/2 cups mixed seeds and/or nuts (pumpkin, sunflower, etc).
1/2 cup mixed dried fruit (cranberries, cherries, blueberries, etc)
1/4 cup mini semisweet chocolate chips
INSTRUCTIONS:
1. Heat the oven to 350 degrees and line a baking sheet with kitchen parchment
2. In a stand mixer fitted with the paddle attachment, cream the butter, brown sugar, and cane sugar until smooth.
3. Add the honey and egg whites, scrape down the side of the bowl using a rubber spatula, and continue to mix for another minute.
4. In a small bowl, whisk together the flour, baking soda, and salt. Add this mixture and the oats to the ingredients in the mixer and continue mixing until just combined.
5. Last, add the seeds, dried fruit, and chocolate chips.
6. Scoop one tablespoon portions onto the prepared baking sheet, leaving about 1-inch between the cookies. Bake until the cookies are lightly browned and they release from the parchment, 8 to 10 minutes.
7. Remove from oven and cool on a wire rack.

The Best Chocolate Cookie Recipe
Ingredients:
¼ cup aquafaba (Liquid from chickpea can!)
1/2 cup date sugar
1/2 cup raw almond butter
½ cup apple sauce
1 cup cocoa powder
2 tbsp unsweetened nondairy milk
¼ tsp vanilla extract
1 tsp baking soda
(optional – 1/8 tsp peppermint extract for a mint chocolate cookie)
Directions:
1.) Preheat the oven to 350 F and line a baking sheet with parchment paper
2.) In a large bowl whisk together baking soda, cocoa powder, and date sugar.
3.) In another bowl whisk together all the remaining ingredients.
4.) Mix together the wet ingredients into dry mixture.
5.) Place 2 tbsp of the cookie mixture onto the parchment paper leaving about 1 inch apart
per cookie
6.) Bake for 14 minutes and transfer to a cooking rack
