INGREDIENTS:
For batter:
Sugar 2 cups
Flour 1 3/4 cups
Cocoa 3/4 cup
Baking Soda 1 1/2 tsp
Baking Powder 1 1/2 tsp
Salt 1 tsp
2 eggs
Milk 1 cup
Oil 1/2 cup
Vanilla Extract 2 tsp
Boiling Water 1 cup
For icing:
Butter 1 cup
Cocoa 1 1/2 cup
Powdered Sugar 2 cups
Milk 2/3 cup
Vanilla Extract 1 tsp
STEP-BY-STEP INSTRUCTIONS:
Preheat oven to 360F / 180C. Grase and flour two 9-in baking pans. Set aside.
In the large bowl of a standing mixer, stir together flour, sugar, cocoa, baking soda, baking powder and salt.
Add eggs, milk, vegetable oil and vanilla extract. Beat until smooth about 3 minutes.
Stir in boiling water. You can use rubber spatula to stir. Batter will be very runny.
Pour batter evenly between the two pans and bake on middle rack of oven for about 30-35 minutes, until toothpick inserted in centre comes out clean with just a few moist crumbs attached.
Let it cool about 10 minutes before removing from pans. Than cool completely.
In the meantime, prepare a chocolate buttercream frosting. Use a standing mixer to beat the butter until fluffy.
Finely add in cocoa, powdered sugar, milk and vanilla extract. Mix until smooth.
Cut each cake horizontally.
Smear evenly 2-3 heaped tbsp buttercream frosting over the first layer of cake, cover with second layer and buttercream frosting and continue that process with remaining layers of cake and buttercream frosting. Spread buttercream frosting evenly with a spatula all over the cake.

PRO TIP
You can also line baking pans with parchment paper circles.
It's good idea to substitute water for 1 cup of hot coffee!

The Best Fudgy Brownies
Servings: 9
INGREDIENTS
8 ounces good-quality chocolate
¾ cup butter, melted
1¼ cups sugar
2 eggs
2 teaspoons vanilla
¾ cup all-purpose flour
¼ cup cocoa powder
1 teaspoon salt
PREPARATION
Preheat oven to 350°F/180°C.
Chop the chocolate into chunks. Melt half, then save the other half for later.
Mix the butter and the sugar, then beat in the eggs and vanilla for 1-2 minutes until the mixture has become fluffy and light in color.
Whisk in the reserved melted chocolate (make sure the chocolate is not too hot or else the eggs will cook), then sift in the flour, cocoa powder, and salt.
Fold the dry ingredients into the wet ingredients, being careful not to overmix as this will cause the brownies to be more cake-like in texture.
Fold in the chocolate chunks, then transfer the batter into a parchment paper-lined square baking dish.
Bake for 20-25 minutes, depending on how fudgy you like your brownies, then cool completely.
Slice, then serve with a nice cold glass of milk!

Triple Choc Fudge Brownie Mix - Cake | White Mill
Deliciously rich and moist chocolate brownie with chocolate buttons
Baking time: 35 mins
2 eggs
125g unsalted butter, cubed
20cm square slice tin
Cooling wire
PREHEAT:
Preheat gas or electric oven with fan to 160 C or without fan to 180 C.
Lightly grease and line base of slice tin with baking paper. Heat butter until just melted then allow to cool slightly.
MIX
Place brownie mix into a mixing bowl, add eggs and butter. Mix with a wooden spoon until thoroughly combined. Transfer
the mixture into the prepared tin and spread evenly to the edges.
BAKE
Bake for 35 minutes or until reaches the desired texture. Allow to cool in tin for at least 15 minutes before inverting onto a cooling wire to cool.

INGREDIENTS
200g butter
2 cup sugar
4 free-range eggs
1 tsp pure vanilla essence
1.5 cup plain flour
2 tsp baking powder
1 cup good-quality cocoa
150g good-quality white chocolate, cut into small chunks
150g good-quality dark chocolate, cut into small chunks
Nuts - Optional
INSTRUCTIONS
1. Preheat the oven to 175c conventional. Line the base of your tray with baking paper.
2. Melt the butter in a saucepan over medium heat. Remove from the heat once the butter is melted, then whisk in the sugar. After the mixture is cooled (you don't want to cook your eggs) add the eggs one at a time and vanilla essence, and whisk to combine.
3. Sift the flour, baking powder and cocoa into the mixture, add the white and dark chocolate and nuts (if using), and very gently fold with a wooden spoon or spatula until just combined. Pour the mixture into the prepared tin.
4. Bake in the oven for about 15-20 minutes then test with a skewer. These brownies are done if the skewer still has a little of the mixture clinging to it. Remove from the oven and cool in the tin before slicing.
5. Enjoy!
