Craisins® Chicken Pasta Salad | Easy Pasta Salad | Turkey Leftovers
What the heck-a-roni are craisins? They are the brand name of Ocean Spray’s dried sweetened cranberries, and we love them! I seem to add them to more dishes, from sweet bread recipes to breakfast cereal to bread stuffing to cold salads and more. They are infinitely more tasty than raisins, and I substitute them whenever I can. This particular back-o’-the-bag recipe didn’t fare so well with our discerning palates and I ended up making a few notable modifications. Most obviously, we completely omitted the Ruby Red Grapefruit Juice which added an unpleasant bitter flavor in this otherwise tasty pasta salad. Our Craisins® Chicken Pasta Salad 8 ounces, 226g, cavatappi pasta, cooked 2-3 cups, 452-678g, cooked chicken or turkey breast, cubed 3 cups, 678g, plain yogurt 1 cup, 226g, mayonnaise 1 cup, 120g, celery, diced ½ cup, 60g, green onions, sliced 2 teaspoons salt 1 teaspoon white pepper 1½ teaspoon curry powder 2 cups, 248g, Craisins 2-3 tablespoons, 30-45ml, lime juice 2-3 tablespoons, 30-45g, white sugar 1½cups, 180g, slivered almonds, toasted
Ocean Spray Craisins® Chicken Pasta Salad
1 pound cavatappi pasta, cooked (6 cups)
4 cups diced cooked chicken or turkey breast
2 cups Craisins, dried sweetened cranberries
1 cup celery, diced
½ cup green onions, sliced
2 cups plain yogurt
½ cup mayonnaise
½ cup Ruby Red Grapefruit Juice
2 teaspoons salt
1 teaspoon curry powder
½ cup slivered almonds, toasted
Cook pasta according to the package directions. Rinse in cold water. Drain completely. Set aside. Toast almonds in a large dry skillet over medium heat, tossing or stirring frequently, until they are toasty and brown, about 10 minutes. Set aside to cool. In a very large bowl, blend yogurt and mayonnaise until combined. Add in the spices and lime juice and whisk to combine. Taste the dressing adding the sugar if you prefer a sweeter flavor. Using a spatula, stir in the celery, then the craisins, then the toasted almonds until completely combined. Add in the chicken or turkey breast and toss to coat. Then finally add the pasta and combine. The salad can be eaten immediately but tastes better if it’s allowed to rest for at least an hour or overnight. If the salad becomes dry—the pasta has absorbed all the yogurt and mayo—just add more yogurt to loosen it up.

Mainely Dish Recipe Video: Turkey Pasta Salad
Part of the University of Maine Cooperative Extension Expanded Food and Nutrition Education Program (EFNEP) Mainely Dish Recipe Video Series.
Turkey Pasta Salad
Serves: 4 Serving Size: 1 cup
Ingredients Needed:
2 cups of pasta noodles, cooked
1½ teaspoons chives, dried, or 1 tablespoon + 1 teaspoon fresh chives (optional)
¼ cup light mayonnaise
1 ⅔ cups cooked turkey, diced
1 cup seedless red grapes, halved
1/3 cup celery, thinly diced
Directions:
Cook pasta according to package directions. Drain.
Stir chives into mayonnaise.
Lightly mix together pasta, turkey, grapes, and celery.
Stir in mayonnaise/chive mixture.
Chill well and serve.

???? super easy roasted carrots-
Ingredients
1 box of elbow pasta (also works with other pasta shapes : )
Rotisserie chicken (I prefer the breast of this recipe)
3 1/2 cups of mayonnaise
1/4 cup of Dijon mustard (if you love mustard you will love 1/2 cup: )
1 tsp of thyme (fresh or dry)
1/2 tsp white pepper
1 green onion
Optional- 1 tsp garlic & herb Kinder’s seasoning
Tip❣️
To preserve longer than 7 days - use 1 tsp apple cider vinegar in the dressing
Using yellow mustard will not have the same flavor profile and it won’t be as good. Edible yes, but not great.
how to enjoy this salad ????️ It tastes great with a side of crackers... I also like it with a side of pumpernickel toast with butter ???? and a pickle... okay, come back and let me know what you think.
