-A good bowl of chili can warm the soul. Here's a great, easy chili recipe using wild game. What better way to beat that cold weather, or warm up from a day full of hunting than with a steaming bowl of chili? We're using some fresh from Utah, Ground Elk meat for this but any of your favorite venison will work.

Ingredients:
1 1/2 lb Freshly ground Venison
1 1/2 lb 1 cubes of Venison
1 lb. Spicy Italian Sausage
2 cans of Kidney Beans (15 oz.)
2 cans of Small red Beans (15 oz.)
4 cans of Stewed Tomatoes (14.5 oz.)
1 Onion
1 Green Bell Pepper
1 cup of Celery
2 cans of Tomato Paste (6 oz.)
3 Beef Bouillon Cubes
1/4 cup Chili Powder
1 Tbsp crushed Garlic
1 Tbsp Brown Sugar
1 Tbsp Worcestershire Sauce
2 tsp cumin
1 tsp Basil
1 tsp Black Pepper

Cooking Game: Venison Chili
Venison Chili
Ingredients:
¼ cup plus 2 tablespoons vegetable or canola oil, divided
2¼ lbs ground venison
Kosher salt and freshly ground black pepper
3 large poblanos, stemmed and diced
1 large onion, chopped
6 cloves garlic, thinly sliced
2 tablespoons ancho chile powder, or to taste
1½ tablespoons ground cumin
1 teaspoon dried oregano
3 tablespoons minced chipotle peppers in adobo
3 (14.5-ounce) cans whole tomatoes, preferably in tomato puree
2 (15-ounce) cans small red beans, kidney beans, or pinto beans, rinsed and drained
3 cups beef stock
Serving Ingredients:
corn chips
shredded sharp cheddar or Pepper jack cheese
sour cream
diced red onions or sliced scallions
sliced jalapenos or serrano chiles

Methods:
Heat a large Dutch oven or other wide, heavy saucepot over medium-high heat.
Add 2 tablespoons of the oil.
Sprinkle the venison generously with salt and pepper.
Working in batches, crumble the venison into large chunks into the pot and sear until browned, transferring to a large bowl as done, 6 to 8 minutes per batch, adding more oil as needed.
Reduce the heat to medium. (If working on an electric range, you may need to remove the pot from heat to let it cool down a bit.)
Add the remaining 2 tablespoons oil, the poblanos, and onions, scraping up the browned bits at the bottom of the pot to cool it down a little faster.
Return to the heat and cook, stirring often, until soft, 8 to 10 minutes. Stir in the garlic, chile powder, cumin, and oregano and cook, stirring constantly, for 1 minute. Add the chipotles and tomatoes, crushing the tomatoes with your hands or mashing with a potato masher, half of the beans, the stock, and the venison with any juices that have accumulated in the bowl.
Stir to combine, then bring to a simmer.
Cook, partially covered, stirring occasionally, until the venison is tender, about 2 hours.
Add the remaining beans and warm through. Adjust seasonings.
Serving Methods: Serve the chili with the corn chips, cheese, sour cream, onions or scallions, and chiles.

Easy Venison Chili recipe
My easy venison Chili Is a favorite dinner in my house once the deer hit the ground! A great dish to serve around the holidays and for large parties!
Serves 10-12
Ingredients
1.25 lbs Venison
1.0 lb pork sausage (optional) Can just use more Venison!!
1 large onion
2 green peppers
2 packets of pre made chili mix
1 10 oz can Rotel
1 12 oz can black beans
1 12 oz can kidney beans
28 oz diced tomatoes
12 oz Roma tomato paste
15.5 oz sweet corn (for the end)salt, pepper to taste
Set Croc pot on high 4 hours or low and slow for 6, once veggies are desired doneness turn off heat.
Easy Venison Chili any of the ingredients can be swapped out or add Jalapenos or more Cayenne if you like more heat! Thanks! - Polack

How to Make the Best Chili Ever
This hearty, meaty chili will fill up the hungriest of appetites. This recipe makes a big ole batch of chili. This recipes contains 4 lbs of meat! 3 lbs of ground meat and 1 lb of chuck roast or stew meat. I love this recipe with venison instead of beef as well. Any combo of meats works but having plenty of ground meat plus some large chunky meat that will break down and get super tender during a 6-8 hour cook is the best.

AWESOME VENISON CHILI RECIPE
RECIPE: This is an amazing and simple recipe for for Venison Chili. You can make is mild or hot as you like with only a couple minor adjustments. This spicy Chili is perfect for those cold fall and winter days and served with Corn bread is a southern tradition. This can be used with no beans for hot dog chili as well! Chili Spice Mix:
6 TBS Paprika
1 TBS Sugar
2 TBS Plain/Kosher Salt
3-1/2 - 4 TBS Cumin
1 TBS Oregano – ground
1 TSP Celery seed – ground
1/2 TSP Sage
2-1/2 TBS Chili Powder
1TBS Red pepper flakes
1 TSP Cayenne Pepper
4 TBS All Purpose flour
One 12oz can of tomatoes per 2# of meat.
This is a medium yet full flavor spice mix. Adjust front end heat with Red Pepper flakes. Adjust back end heat with Cayenne.
