7 c Whole wheat flour/divided
To 8 cups 2 pk Dry yeast
1 tb Salt
1 1/2 c Milk
1 1/2 c Water
1/4 c Plus
2 tb Butter or margarine
1/4 c Honey

Combine 3 cups flour, yeast, and salt in a mixing bowl; stir and set aside. Combine milk, water, butter, and honey in a medium saucepan; place over low heat, stirring constantly, until mixture reaches 120 degrees to 130 degrees. Stir milk mixture into flour mixture, and beat at medium speed of an electric mixer 2 minutes or until smooth. Stir in enough remaining flour to make a stiff dough. Turn dough out onto a lightly floured surface; let dough rest 10 minutes. Knead dough until smooth and elastic (about 3 minutes). Place in a well-greased bowl, turning to grease top. Cover and let rise in a warm place (85 degrees), free from drafts, for 50 minutes or until dough has doubled in bulk. Punch dough down, and divide in half; shape each portion into a loaf. Place in 2 well-greased 9- x 5- x 3-inch loafpans. Cover and let rise in a warm place, free from drafts, 50 minutes or until doubled in bulk. Bake at 375 degrees for 35 to 45 minutes or until loaves sound hollow when tapped. Brush loaves with melted butter; remove from Recipe continues on Whole Wheat Bread-part 2 -----

I have noticed there is difference in the properties of whole wheat flour/wholemeal flour for different brands
So the amount of water to be added will be slightly differ and the kneading time to achieve good gluten strength will also vary.
And if our dough is not showing enough gluten strength ,our bread will not rise well and so it will be denser in texture than regular white bread.

Ingredients:
-Pani (Water) lukewarm 3/4 Cup
-Brown sugar powdered 1 tbs
-Khameer (Instant yeast) 2 tsp
-Chakki ka atta (Whole wheat flour) sifted 1 & ½ Cup
-Brown sugar powdered 1 tbs
-Namak (Salt) ½ tsp
-Olive oil 2 tbs
-Anda (Egg) 1 (room temperature)
-Chakki ka atta (Whole wheat flour) sifted 1 Cup
-Olive oil 1 tsp
-Doodh (Milk) 2 tbs
-Olive oil 1 tsp
Directions:
-In small jug,add lukewarm water,brown sugar and mix well.
-Add instant yeast and mix,cover and let it rest for 10 minutes.
-In bowl,add whole wheat flour,brown sugar,salt and mix well.
-Add olive oil,egg,yeast mixture and mix well for 8-10 minutes.
-Gradually add whole wheat flour and knead well.
-Add olive oil and knead until dough is smooth.
-Cover and let it proof for 45 minutes or until double in size (warm place).
-Grease hands with oil and knead dough again until smooth & fold according to pan size.
-Grease 9 x 3 inch loaf pan with olive oil and place prepared dough and let it proof for 30 minutes or until double in size (warm place).
-In milk,add olive oil,mix well and brush over the dough.
-Bake in preheated oven at 180 C for 20-25 minutes (makes 1 bread loaf).
-After baking,let it cool and cut into slices & serve!

-Dhak dein aur 45 minutes ya size double hunay tak garam jagha per rakh dein.
-Haathon ko oil sa grease karein aur dough ko smooth hunay tak dubara ghond lein aur pan size ka hesab sa fold ker lein.
-9 x 3 inch loaf pan ko olive oil sa grease karein aur tayyar dough rakh ker 30 minutes ya size double hunay tak garam jagha per rakh dein.
-Doodh mein olive oil dal ker ache tarhan mix karein aur dough ka upper laga lein.
-Preheated oven mein 180 C per 20-25 minutes kliya bake ker lein (makes 1 bread loaf).
-Baking ka bad thanda ker lein aur slices mein cur ker lein & serve karein!

Whole Wheat Bread Recipe
Makes one 9x5 loaf bread
Bakes @ 375 until internal temperature reaches 190F degrees
and its golden brown (25-27min)
1st proof: 45-50 min (doubled in size)
2nd proof: 1:00 hour -1hour :10min (doubled in size)
2 1/4 tsp active dry yeast
Pinch of brown sugar
1/2 cup warm water (105-110F degrees)
3/4 cup buttermilk (room temperature)
1/8 cup honey
1/8 cup of vegetable oil
1 1/2 tsp salt
1 1/4 cup whole wheat flour (14% protein)
2 cups all purpose flour
NOTES:
* To make your own buttermilk: Measure out 3/4 cup of room temperature whole milk minus 2 tsp. Then add 2 tsp of white vinegar or lemon juice and whisk. It will start to curdle.
*If bread is browning too much you can place a piece of foil paper over it. Do not wrap the bread. You can lay the foil on the rack right above the bread.
