Ingredients for whole wheat bread
600g / 21oz Wholemeal flour
420g / 15oz Lukewarm water approx 40°C / 104°F
7g / 2 tsp Instant or active dried yeast or 20g / ¾oz of fresh yeast
1 tsp Sugar
1tsp Table salt or 1½tsp Kosher salt
1½ tbls / 20g Vegetable oil

We use hard red spring wheat in our Whole Wheat All Purpose Flour to ensure a rich, nutty flavour and texture.

Ingredients:
3 cups warm water ( more if needed )
7½ cups 100% Whole Wheat Flour, ( leaving ½ cup for working dough )
1 or ½ tsp, sea salt
1/3 cup honey or 2 tbsp sugar
1 tbsp Yeast, fast rising or traditional
2 tbsp, butter, margarine or oil ( room temp or warm )
Extra butter for pans and to spread on top of bread and hands for forming dough.
Conversion Chart:
1 cup of flour is 128 grams or 4¼ oz per cup x 7½ cups, 1 tbsp yeast is 9.3 grams or 0.30 oz, Honey 1/3 cup is 80 ml, Butter 1 tbsp is 14 grams, Warm water 1 cup is = 250 ml
My bread pans are 5 x 9 and the average bread pan is 6 x 9
Method:
- In a small bowl, add warm water, yeast and stir, then add honey or sugar and let rise for 5 minutes or until you see it foaming.
- In a large bowl add flour, sea salt, adding 7 cups of flour leaving ½ cup for working dough, during the mixing stage.
- Start to mix using a spoon or kitchen aid, add yeast mixture with honey and water, melted butter continue mixing dough with hand and spoon.
( Remember to wash your hands before and after working with dough )
( Please note at this stage if you need to add more warm water to work the dough only add at this mixing stage )
- Continue mixing the ½ cup of flour until all dough starts to form a ball and all dough is off the sides, kneading for 10 minutes to activate the yeast and form the dough into a ball.
- After forming a dough ball, mark the sign of a cross on the top of dough, cut a cross with your knife, this helps you see the texture of your dough inside as it rises. ( Optional )
- Cover with lid or parchment paper and towel. Keep in a warm place in the kitchen this will make it rise faster, a viewers tip was to put in the oven with the LIGHT ONLY on and put timer on 20 to 30 minutes.
- After it's finished rising, uncover dough and knead your dough again for a few minutes, then cover and wrap the same way and place in a warm place again for another 20 minutes or so.
- After 20 minutes, DON'T DEFLATE YOUR DOUGH, put a little butter on your hands and shape into small dough balls x 3 for one loaf pan or one long piece of dough. .
- Oil loaf pans with butter or oil then adding dough to each one.
- Cover with parchment paper and towel then put pans in a warm place again to let rise just a little above pans this will take about 20 to 30 minutes. DON'T LET RISE ANY LONGER, DOUGH CAN DEFLATE AFTER RISING TO LONG.
- Once bread has risen, Preheat oven to 350ºF then put bread in oven and set timer for 30 to 35 minutes. ( Baking time sometimes is depending on your oven.)
- Once bread is baked, remove from oven and removing from pans unto a cooling rack.
- Put some butter or margarine all over top of warm bread, cover with parchment paper and towel let cold to room temperature before bagging to prevent moisture buildup in bag before freezing or storing.
Serve baked bread with butter, jam or molasses on warm bread, only keep one loaf out at one time freeze the other two loaves in a freezer bag for another time, this will keep them fresh longer.

Bread is a popular topic around here and we are back with your much requested 100% whole wheat loaf. I have to admit--whole wheat bread is an acquired taste here in the US where we have been so conditioned to flavorless white flours.
So don't be discouraged if your family doesn't grab on to this right away. You can add a bit of white flour to ease them in if needed, but this recipe really is written for use with all whole wheat (make my beginner white bread video and swap up to half of the flour with whole wheat to it if you'd like to).
Today I'll be showing you how to temper the bitterness wheat bread can have while still getting a tender, flavor-complex loaf that's just begging for some butter and jam.

Ingredients:
1 to 1 1/8 cups (227g to 255g) lukewarm water
1/4 cup (50g) vegetable oil
1/4 cup (85g) honey, molasses, or maple syrup
3 1/2 cups (397g) King Arthur White Whole Wheat Flour
2 1/2 teaspoons instant yeast, or 1 packet active dry yeast dissolved in 2 tablespoons of the water in the recipe
1/4 cup (28g) Baker's Special Dry Milk or nonfat dry milk
