How To make Yellow Mung Bean Pudding
1 1/2 c Yellow mung beans
2 tb Arrowroot
1 c Sugar
1/4 c Coconut milk
1/4 ts Salt
Soak the mung beans in 2 c water for 20 minutes. Drain & place in a large pot. Add 10 c water & cook over medium heat, uncovered, for 15 minutes. Dissolve the arrowroot in 1/4 c hot water & stir into the mung beans. Add the sugar & cook, stirring, for 15 minutes, or until all the water has been absorbed. Remove from the heat. In a small pot, heat the coconut milk with the salt for 5 to 7 minutes or until it begins to boil. Serve the pudding in individual bowls, topped with 1 tb coconut milk. It will keep in the refrigerator for 1 week & may be served either hot or cold.

Tau suan is a dessert soup made with split mung (green) beans. Mung beans is believed to aid the body in reducing heatiness (cooling), while this starchy and gooey concoction definitely warms your stomach as well. Top this up with loads of youtiao (fried dough sticks) and let it soak in the soup for extra texture and aroma. It’s an old school comforting dessert that never fails to bring a smile since these days of childhood! For a more deep colour version use brown / red sugar instead of normal white sugar.

Mung Bean Rice Crepe Recipe | Kanom Tua Pab | ขนมถั่วแปบ
Kanom tua pab, or Mung Bean Rice-Crepe, is made from glutinous rice flour, filled, and coated with steamed mung bean and shredded coconut.
Kanom is a Thai word for dessert or snack, and tua pab is a type of bean like snow bean. The shape of the dessert is similar to tua pab bean and that where the name came from.

Ingredients
Fried Mung bean 1 cup
Sugar 2 tablespoon
White flour 1 cup
Coconut Paste ½ (half) cup
Ghee 4 tablespoon
Salt as much to taste
Processing
1. Boil Mung bean than dry off and grind to paste.
2. Mix well with ghee, mung bean, all the ingredients, and put aside for 1 (one) hours.
3. After one-hour dough should divide into the desired quantity. Fill the dough with coconut mixture then close the front, fry the cake in deep oil until the colors get brown, and place it into the sugar syrup.
Coconut Mixture Ingredients
Coconut paste 2 cup
Sugar 1 cup
Processing
1. Mix sugar and coconut paste in a pan cook on the burner.
2. Stir until sticky.
Syrup Ingredients
1. Make syrup with 2 (two) cups sugar, 1 (one) cup water boil until the syrup gets thick.
