How To make Almond Raspberry Tassies
pastry dough:
1/2 c Butter or margarine
(softened) 3 oz Cream cheese
1 c Flour
filling:
1/4 c Raspberry preserves
1/2 c Sugar
1/2 c Almond paste; 2-ozs
2 Egg yolks
3 tb Flour
2 tb Milk
1 tb Orange juice
Pastry Dough. Blend softened butter and cream cheese. Stir in flour. Cover and chill. Divide dough into 24 balls. Press into sides and bottom of small muffin tins. Fill with almond-raspberry filling. Filling. Put 1/2 teaspoon raspberry preserves into each unbaked shell. Use your fingers to combine sugar and almond paste. Add egg yolks one at a time. Beat well as you add each yolk. Blend in other ingredients. Spoon into shells. Bake in a 400 oven for 15 minutes. Cool before removing from pan. Store in refrigerator or freeze. From. Cream Cheese Crust
One stick or 8 tablespoons of softened butter
1-8 ounce package of cream cheese
3 c to 3 1/2 cups almond flour
1/2 teaspoon salt
Combine all ingredients in a food processor until the dough is touchable, and you can form a ball in your hands and spread into the bottom of a silicone muffin form pour filling in and bake 12 to 15 minutes till golden brown. half at Thur spin the cookie sheet around for even baking.
Pecan Filling
4 Eggs or egg substitute
1 c Coconut Sugar or Allulose for Sugar Free
2/3 c maple syrup or sugar free pancake syrup
1/3 c molasses or 1/3 c sugar free pancake syrup
1/4 t salt
1/2 t cinnamon
1 t Vanilla
2 T spiced bourbon
4 T Butter
2 T arrowroot powder
1 c chopped Pecans
Mix all ingredients in a food processor except pecans until well blended. Add pecans and just pulse till mixed in. Pour into pie crusts and bake at 350° for 12 to 15 minutes or until golden remove from oven and cool for 15 to 20 minutes . Now place in freezer for 3 hours. Remove from freezer and push out of molds and enjoy.

Almond-Chocolate-Hazelnut Crescents

1 3/4 cups all purpose flour
1 1/4 cups finely ground almonds
1/2 cup finely ground toasted hazelnuts (filberts)
1/2 cup unsweetened cocoa powder
1 1/4 cups butter, softened (room temperature)
1 cup powdered sugar
1 tsp vanilla
1 cup chocolate chips melted
1. In a medium bowl, combine flour, almonds, hazelnuts and cocoa powder; set aside. In a large bowl, beat butter with an electric mixer on medium to high for 30 seconds. Add sugar and vanilla. Beat until combined, scraping bowl occasionally. Add the flour mixture, beating at low speed, just until combined. Cover and chill for 2 hours or until dough is easy to handle.
2. Preheat oven to 350F. Shape dough into 1 balls. Roll between hands into a small log shape with tapered ends and bend them inward to make a crescent shape.. Place the crescents one inch apart on an ungreased cookie sheet and bake 15-17 minutes until set.
3. Drizzle melted chocolate over cooled cookies, let stand until chocolate sets.

Here is my version of a Raspberry Crostata. Did you know that 'Crostata' is just another name for 'tart', albeit one that is baked free form rather than in a tart pan? What this means is that we just roll the pastry into a round, spread on the filling, and then fold the edges of the pastry up and over the filling.
