How To make Amaranth Pancakes
1 c Amaranth cereal
1/4 c Whole wheat pastry flour
1 t Baking powder
Egg replacer for 1 egg 3/4 c Soy, rice, or nut milk
In a medium-sized bowl, mix together the cereal, flour, egg replacerand baking powder. Pour the milk over the mixture and beat with a spoon until the ingredients are well combined. If the batter is too thick, you may add a little more milk. Drop the batter by the 1/4 cup into a hot, oiled skillet and cook over medium-high until bubbles begin to appear on the tops of the pancakes. Turn them over and cook until done. Here is the recipe in detail:
For 4 people
TOTAL TIME: 25 mins
Preparation: 15 mins
Cooking: 10 mins
Ingredients :
100 g Maizena
150 g Amaranth flour
25 cl almond milk
25 cl Water
3 eggs
butter for cooking
20 g Sugar
1 pinch Salt
Step 1: For the cornstarch and flour into a mixer bowl and add the salt and sugar.
Add the whole eggs and mix.
Step 2: Gradually add the almond milk and water and mix until you obtain a homogeneous and fluid paste. Leave to rest for about 1 hour.
Melt a knob of butter in a crepe maker or non-stick pan and add a small ladle of batter.
Step 3: Cook the pancake for about 1 min on each side.
Keep warm and cook the other pancakes until the batter is used up.
Step 4: Sprinkle with a veil of sugar and serve.

Gluten Free Pancakes | Breakfast Series 2.0 | Chef Afraz | Sanjeev Kapoor Khazana
The way Americans like their breakfast is pancakes with the use of cinnamon, berries and maple syrup. These amaranth flour pancakes are simply delicious.
GLUTEN FREE PANCAKES
Ingredients
1 cup amaranth flour (rajgire ka atta)
¼ cup castor sugar
2 eggs
½ tsp vanilla essence
A pinch cinnamon powder
½ tsp baking powder
2 tbsps melted butter + greasing
½ cup butter milk
Fresh blueberries for serving
Fresh strawberries or serving
Maple syrup for serving
Fresh mint leaves for garnish
Method
1. Take a large bowl, add castor sugar, break 2 eggs, vanilla essences and whisk till well combined.
2. Add amaranth flour, baking powder, cinnamon powder and mix well. Add melted butter, butter milk, and whisk well.
3. Heat a non-stick, grease with little melted butter and wipe little with the help of tissue paper. Pour one full ladle spoon of the batter and cook on a medium heat till the underside is golden brown.
4. Flip the pancake and cook for the other side till cooked completely.
5. Place the pancake on a serving plate, add blueberry, strawberry and drizzle some maple syrup on top and garnish with fresh mint leaves.
6. Serve.
