1/2 c : Am Amaranth Flour
1 1/2 c : Warm Water
Am Sesame Seeds (Optional)
3 1/4 c : Am Rye Flour

450 ml of warm water (2 cups)
5 g of salt (1 tsp)
15 ml of olive oil (1 tablespoon)
250 g of flour (1.5 cups)
stir with a spatula and turn off the heat
continue to knead the hot dough
cover the dough and leave to rest for 15 minutes
divide the dough into 10 equal parts
roll out to 15 cm diameter (6 inches)

Amaranth...Super Food, Super Plant!
Amaranth is one of the few plants that is considered to be a complete protein. We discuss why it is a super food, a super plant, and we show how to harvest the seed from plants in our greenhouse. We also share two ways to cook the whole seed including popping the seed for a delicious snack.
Popped Amaranth Snack Bars
2 cups popped amaranth
3/4 cup mixed dried fruit, diced
1/4 cup nut mixture (We used Natur Source Organic Salad Topper)
1/2 cup nut butter (peanut butter, almond butter, etc.)
1/2 cup honey
1/2 tsp salt
Pop the amaranth one tablespoon at a time in the bottom of a very hot dry pan. Set aside. In a large bowl, add the diced dried fruit, the nuts and the popped amaranth. In a small sauce pan add the nut butter, honey, and salt and heat until bubbly. Add the hot mixture to the dry ingredients and mix with hands until completely incorporated. Press into an 8x8 pan lined with parchment paper and refrigerate 4 hours. Cut into bars. Store in airtight container.
