Christmas is only a few weeks away and we all know what that means! Let the holiday videos begin! Everyone loves the holiday series and I hope this year will be no exception. Today we open the season with a compilation of some favorite holiday cheese ball recipes that I have done over the years. Next week we are hitting the ground running with all new recipes and some tried and true favorites that will be updated. Cheese Ball Bites | Delish
Our favorite word to hear in front of cheese is loaded.
DIRECTIONS
1. Mix together cream cheese, cheddar, garlic powder, paprika and season with salt and pepper. Form into 18 small balls and refrigerate until firm, 1 hour.
2. In a shallow bowl or on a plate, stir together cooked bacon, chives, and pecans.
3. Roll balls in bacon-chive-pecan mixture and insert a pretzel stick in each ball.
4. Serve. (If not serving right away, loosely cover with plastic wrap and return to fridge. Let sit at room temperature 15 minutes before serving.)
INGREDIENTS
12 oz. cream cheese, softened
1 c. shredded Cheddar
1 tsp. garlic powder
1 tsp. paprika
kosher salt
Freshly ground black pepper
8 slices bacon, cooked and finely chopped
1/3 c. finely chopped fresh chives
1/3 c. finely chopped pecans

Mini Cheese Balls - Party Appetizer
These Mini Cheese Balls are a perfect appetizer or snack for parties. I make them at most of our gatherings and they are always a big hit!

Ingredients (for ~40 cheese balls):
- 2 ½ cups (300 g) finely shredded cheddar cheese or a blend of shredded cheeses (I used Black Diamond Italiano pre-shredded blend of cheeses)
- ¾ cup (100 g) grated parmesan cheese
- 2 eggs
- 4 Tbsp white flour
- 1 tsp baking powder
- oil for frying
Easy Breezy Pineapple Cream Cheese Ball
In my attempt to come up with a Holiday recipe in the form of a snack a pineapple cheese ball came to mind. So, I went out, bought the supplies, made it, and the outcome was simply superb. Made with a combination of Philadelphia cream cheese, pineapple, red bell peppers, onions, Worcestershire sauce, garlic powder, and salt, the outcome is simply to die for. Roll this in some crushed pecans or walnuts, place some crackers around the side, and your friends and family will simply love it. As a matter of fact, it got to the point where I make this up every Christmas or special occasion.
As always, you can alter the ingredients according to your liking. For example, a few drops of tabasco sauce, just for some heat, would not be out of place. In my opinion, pepper does not seem to fit the bill but it's entirely up to you. I like the fresh pecans, but you can use walnuts or even peanuts for that matter.
There are, however, a few simple suggestions to make the recipe easier to execute. In example, ensure that the cream cheese is it room temperature. That way, the dish is much easier to put together. Also make sure that the pineapple is well drained. I always use crushed pineapple in the can, but you could use pineapple tidbits or even whole pineapple rings and cut them up. It's simply a matter of personal preference.

CRANBERRY PECAN CHEESE BALL
Ingredients
• 16 ounces full fat cream cheese (about 500 grams)
• 1/4 cup full fat sour cream
• 2 cups shredded cheddar cheese (we like 1 cup each white and orange cheddar)
• 1 cup chopped dried cranberries
• 1 tablespoon lemon juice
• 1/2 cup chopped pecans
• 1/4 teaspoon black pepper
• sea salt (to taste)
• 1/4 teaspoon garlic powder
• 1/4 teaspoon onion powder
• 3/4 cup chopped pecans (for the outside of the cheese ball)
• crackers, pretzels, or veggies for serving
Instructions
• In a medium bowl, combine the cream cheese, sour cream and shredded cheese with a rubber spatula or with a hand mixer (if desired).
• Add the chopped cranberries, lemon juice, chopped pecans, pepper, salt (to taste), and garlic and onion powders.
• Stir well to combine and using your spoon or spatula, roll the mixture into a rough ball shape.
• Place a large piece of plastic wrap on your work surface and add the cheese ball onto the plastic wrap. Using the plastic wrap, roll the cheese ball into a smooth ball shape wrapping it tightly in the plastic.
• Chill the cheese ball in the fridge for 2 hours or overnight.
• Before serving, remove the cheese ball from the plastic wrap and roll it in the 3/4 cup chopped pecans until the cheese ball is covered evenly with the chopped pecans.
• Serve immediately on a platter with your favourite crackers, pretzels, baguette slices, or veggies.

Method:
1. To a mixer add cooked sweetcorn kernels and pulse it.
2. Grate the boiled potatoes and cheese and keep it aside.
3. To a large bowl, add grated potatoes, pulsed corn kernels, corn kernels, cheese, onions, green chilli, ginger, coriander leaves, salt, pepper, corn flour and bread crumbs.
4. Mix everything well and knead well.
5. Make small balls out of the mixture.
6. Make a corn flour slurry.
7. Dip the corn balls in the slurry and roll it in the bread crumbs.
8. Refridgerate the balls for 15 mins.
9. Heat oil in a kadaai, and drop the corn balls.
10. Fry the balls until they are golden brown in colour.
