Apple Raisin Muffins
These muffins are so moist and delicious, they are sure to be a favorite. I liked them even better cold the next day. If you want to add nuts to this muffin, reduce the amount of raisins to 1/2 cup and add 1/2 cup of your favorite nut.
Apple Raisin Muffins
1 egg
1 cup raisins
1 apple, peeled, cored and chopped
1/2 cup oil
1 cup all purpose flour
1 cup oats (I used whole rolled oats)
1/3 cup sugar
1 Tbsp baking powder
1 tsp salt
1 tsp nutmeg
2 tsp cinnamon
Add all ingredients to mixing bowl and stir. Mixture will be lumpy. This makes 12 nice sized muffins. You can grease a muffin pan or use paper muffin cups. Fill 3/4 full.
Bake 400* for 15 to 20 minutes.

JILL'S VEGAN CARROT, APPLE, RAISIN & NUT MUFFINS
Recipe:
1 1/2 cup whole wheat pastry flour (All Purpose is fine)
1/4 cup brown sugar (packed)
¼ cup apple sauce
1 1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 flax “eggs” (See recipe below)
4 tablespoons vegetable oil (I use avocado)
1 teaspoon vanilla extract
2 tablespoons plant-based milk
1/2 large apple, cored, peeled, and diced (I used Fuji, but any red apple will do)
1/2 cup raisins (dried cranberries would be great as well)
1/2 cup grated carrots (about 2 medium carrots)
1/2 cup walnuts, chopped
HOW TO: Preheat oven to 350 degrees.
In large bowls, mix together flour, sugar, baking soda, cinnamon, and salt.
In a separate bowl, whisk together “eggs”, oil, milk, and vanilla. Add to flour mixture and stir until just combined.
Add apples, raisins, carrots, and walnuts. Stir gently until well mixed together.
Spoon batter into 12 muffin tin cups (either grease tin or use paper cups). Fill muffin cups about 2/3 full of batter.
Bake for approximately 20 minutes (check with toothpick test). Remove from oven.
Place on a cooling rack for 5 minutes. Remove muffins from the pan and continue to cool on cooling rack. YUM!!!
FLAX SEED EGGS: Mix 2 tablespoons of flax seed meal with 5 tablespoons water. Set aside for approximately 10 minutes. The mixture should be gelatinous when ready to use.

Apple Raisin Muffins
This recipe makes a muffin that is bursting with flavour.
Using ready-made apple sauce means that the prep time is fast with great apple flavour without the need to peel and chop up your apples.
This will be one of your go-to muffin recipes and make a great breakfast muffin or snack. They freeze really well if 12 is too many or you want to double up to make 24, but the recipe is also really easy to divide into half and just make 6.

Makes 12 muffins
Ingredients:
3 cups (270g) rolled oats
1 teaspoon cinnamon
2 teaspoons baking powder
1/4 teaspoon salt
1 cup (240ml) milk
2 eggs
1 cup (255g) unsweetened applesauce
3 tablespoons (60g) honey or maple syrup
1 teaspoon vanilla extract
1/2 cup (60g) dried cranberries – optional
Directions:
1. Preheat oven to 360F (180C).
2. In a large bowl, stir oats, baking powder, cinnamon and salt. Set aside.
3. In separate bowl whisk eggs, milk, honey, applesauce and vanilla.
4. Combine dry ingredients with wet ingredients. Mix until combined. Add cranberries or other additions that you like and mix.
5. Divide the batter evenly between 12 greased muffin cups or put paper muffin cups into muffin tin (optional) and spry the paper muffin cups with cooking oil.
6. Bake for 25-30 minutes or until golden.
7. Let cool before releasing from the tin.
