Banana Raisin Muffins Recipe
How to make banana Raisin muffins recipe by totikky tikky, The muffin recipe is very easy to make and very delicious. If you like muffins, you shouldn't miss making this muffin recipe. Hope you will like it.
Ingredients (for 10 muffins)
1 cup cake flour
1/8 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1/2 cup brown sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 egg at room temperature
1/4 cup milk at room temperature
1/4 cup vegetable oil
60 g raisins mixed with 1 tsp cake flour
1 mashed ripe banana
Instructions
1.In a mixing bowl, mix together the cake flour, baking soda, baking powder, salt, ground cinnamon, ground nutmeg and brown sugar. Set aside.
2.In another mixing bowl, mix together the egg, milk, vegetable oil.
3.Mix the wet ingredients, mashed ripe banana and dry ingredients together, but do not over mix.
4.Spoon the batter into muffin liners.
5.Bake the muffins in the preheated oven for 18 minutes
at 180°C.
6.Wait for the muffins to cool for about 5 minutes and enjoy.

BAKED BANANA OATMEAL CUP RECIPE
3 cups rolled oats
2 teaspoons baking powder
1 teaspoon cinnamon
1/8th teaspoon ground nutmeg
1/2 teaspoon kosher salt
1 cup mashed banana (2-3 bananas depending on their size)
2 pastured eggs
1.5 cups of unsweetened almond milk (or any milk you prefer)
2 tablespoons mini chocolate chips
Preheat oven to 350 degrees F.
Spray a 12-cup muffin tin with cooking spray or coat it with coconut oil or butter.
In a large bowl combine oats, baking powder, cinnamon, nutmeg, and salt.
In a separate bowl mix together mashed bananas, eggs, and milk until well combined.
Pour the milk mixture over the oat mixture and stir well to combine.
Evenly divide the oat mixture between all 12 muffin cups and then top each one with a sprinkle of chocolate chips.
Bake for 20-25 minutes or until set and cooked through. Allow to cool and then store in an airtight container in the fridge for up to a week.
Recipe Notes
*I like these muffins best warm or room temperature so if I am eating them from the fridge, I will either heat them in the microwave for 30-45 seconds or pop them in the toaster oven until warm.
*I rely on bananas to keep this recipe naturally sweet. If you like a sweeter flavor you can add a couple of tablespoons of brown sugar or coconut sugar along with the dry ingredients.
I top each muffin with chocolate chips because my kids demand them. Feel free to use other mix-ins like blueberries, walnuts, raisins, or raspberries. Stirring them into the batter is certainly an option if you want more flavor through the muffin cup.

Ingredients
3 ripe bananas
¼ cup canola oil (may substitute vegetable oil) (60ml)
¼ cup unsalted butter melted and cooled at least 5 minutes (60g)
½ cup sugar (100g)
½ cup light brown sugar tightly packed (100g)
2 large eggs room temperature preferred
1 Tablespoon vanilla extract
2 cups all-purpose flour (250g)
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
¼ cup buttermilk (60ml) room temperature preferred
Streusel (optional)
1/2 cup all-purpose flour (65g)
1/2 cup brown sugar (100g)
1/4 teaspoon salt
1/4 cup unsalted butter, cold (60g)
Instructions
00:00 Introduction
Preheat oven to 425F (220C) and line a muffin tin with paper liners*
00:13 Place peeled bananas in a large bowl and use a fork or a potato masher to mash them - bananas should be well-mashed.
00:38 Add canola oil and melted butter and stir well.
00:55 Stir in sugars until well-combined.
01:05 Add eggs and vanilla extract and butermilk and stir well. Set aside.
01:24 In a separate bowl, whisk together your dry ingredients -- flour, baking powder, baking soda, and salt.
01:42 Add dry ingredients to your wet batter and gently fold in until ingredients are just combined (don't over-mix the batter!).
02:02 Portion batter into prepared muffin tin, filling each liner 3/4 of the way full. Set aside and prepare your Streusel topping.

02:17 Combine flour, brown sugar, and salt in a medium-sized bowl and use a fork to stir the ingredients together.

Sprinkle streusel topping evenly over each muffin.
03:12 Bake muffins on 425F (218C) for 8 minutes and then reduce the oven temperature to 350 (175C) (do not open the oven door or remove the muffins, just leave them in and reduce the temperature) and bake another 7-8 minutes on 350F (177C). A toothpick inserted in the center of the largest muffin should come out clean or with few moist crumbs (no wet batter) to test for doneness.
Allow muffins to cool before enjoying.

How To Bake
- Bake at 200 C 5 minutes then reduce the oven temperature to 160C and continue baking for another 18-20 minutes or until the muffins are brown on top and a skewer inserted in the centre comes out clean

∙150g or 5/8c buttermilk
∙3g or 3/4 tsp vanilla extract
∙50g or 1/4c neutral oil
∙50g or 3 1/2Tbsp butter (melted and cooled)
∙375g or 3c ap four (11.7% protein)
∙8g or 1.5tsp salt
∙12g 1 slightly rounded Tbsp baking powder
∙4g or rounded 1/2tsp baking soda
∙280g or 1.5c fresh or frozen blueberries

∙260g or about 2 med-lrg ripe banana, mashed
∙340g or 2 3/4c ap flour (11.7% protein)
∙8g or 1 1/2tsp salt
∙12g 1 slightly rounded Tbsp baking powder
∙4g or rounded 1/2tsp baking soda
∙110g or about 1c toasted chopped walnuts
Add sugar and eggs into a bowl and whisk to combine. To that, add molasses, oil, buttermilk, sour cream, vanilla, and banana. Whisk to combine.
In separate bowl measure flour, salt, baking powder, baking soda, & walnuts. Whisk to combine. Add wet ingredients to dry. PUMPKIN SPICE NUT MUFFIN:
USE RECIPE ABOVE only swap out the following:
∙Maple Syrup instead of Molasses
∙260g or about 1c canned pumpkin puree or roasted butternut squash Instead of banana

∙And add 5g or 2tsp pumpkin spice to the dry ingredients
