How To make Applesauce Cake Waffle
BEV CHRISTENSEN 10/93:
2 c Pancake or waffle flour
1/2 c Sugar
1/2 ts Nutmeg
1/2 ts Cinnamon
1/8 ts Cloves
3 lg Eggs, separated
1/2 c Applesauce
4 tb Melted butter
Mix flour, sugar and spice, until thoroughly blended. Add slightly beaten egg yolks to applesauce, (mash applesauce if it is homemade and too chunky) and add to dry ingredients. Add melted butter, and fold in stiffly beaten egg whites. Bake in a moderately hot waffle iron. Makes 6 waffles. -----

1 1/4 c spelt flour (or all purpose)
1 tsp baking powder
1 c almond milk
1/2 c apple sauce

2 Tbsp agave syrup (feel free to use more when using unsweetened apple sauce)

Delicious Homemade Carrot Cake Belgian Waffles #shorts

The carrots at my farmer's market inspired this recipe. They were absolutely beautiful so I wanted to make something really special with them. I set out to make a belgian waffle that took my favorite parts of both carrot cake and belgian waffles and I am thrilled with how these turned out. They have a beautiful custardy textured middle, they are crammed full of carrots, and they are not as overly sweet as I sometimes find carrot cakes to be.
The ingredients here are ever so slightly different than the ingredients in the short. I tested a few substitutions to reduce the calories and sugar in the final waffles. These substitutions are reflected in the ingredients below as they may or may not be readily availble to everyone.
The next time I make these waffles (which will be soon they are DELICIOUS) I will be using all wheat flour instead of any AP flour, all sugar will be replaced with monk fruit, and I will add nuts (pecans are my favorite!). For those that like rasins in their carrot cake, you can add between 1/2-1 cup of raisins.
If you are not looking to lighten up your recipe and would like to make these just a little more over the top, use butter in the same quantity as applesauce, and use sugar instead of any monk fruit.
Ingredients:
400g AP flour
100g wheat pastry flour
2t cinnamon
1/2t cardamom
1t salt
2 1/2t (1 packet) instant yeast
4 eggs, separated
1c monk fruit
1/4c brown sugar
2c milk
2t vanilla
2lbs carrots
