A healthy muffin is one that helps maintain or improve the overall health.
This muffins are with apples and bananas, NO SUGAR and NO BUTTER.
Recipe :
120g whole wheat flour
120g all purpose flour
1tsp baking powder
1tsp vanilla extract
1/4tsp salt
125g applesauce
300g banana puree
124g honey
100g coconut oil
2 eggs
topping:
2 apples, peeled and chopped
50g sugar
2tsp cinnamon
applesauce:
3 apples
1/8tsp cinnamon
2tbsp sugar
water
how to make applesauce: simmer on low heat 15-20 minutes until tender then smash with a fork
bake for 20 minutes at 180c

Apple Sauce Wholegrain Spelt Breakfast Muffins: no eggs
Apple sauce muffins are a perfect weekend breakfast treat. Made using wholegrain spelt flour semi-healthy. This breakfast muffin uses apple sauce as a sweetener and only a small amount of sugar, spice, and the added texture of walnuts and raisins. This muffin recipe is made without eggs or dairy, so they're suitable for a plant-based or vegan diet.
Inspired by this recipe and modified to suit my taste and to balance the wholegrain spelt flour I used

0:31 step 1 preheat oven 200c/180c fan or 400f/360f fan and line or grease your muffin tray

* Ground cinnamon – 1 ts

* Walnuts, toasted and chopped – 1/4 cup
* Raisins or sultanas – 1/4 cup

* Apple sauce – 1 cup
* Oil – 4 tbs or small mashed banana or extra apple sauce
* Apple cider vinegar, or white vinegar – 2 ts

Ingredients:
300g Self Raising Flour
50g Rolled Porridge Oats
1Tsp Baking Powder
1.5 Tsp Cinnamon Powder – extra for dusting
2 Apples – Peeled and finely chopped
60g Caster Sugar
80g Soft Brown Sugar – some extra for topping
250ml Full Fat Milk
1 Tsp Vanilla Extract
200g Salted Butter – Melted
2 Large Eggs - Beaten

The BEST Apple Muffins Recipe | Soft & Moist Apple Muffin
Here is the best apple muffins recipe! Soft & moist apple muffin is the whole family favorite.
When the temperature drops, is there anything more comforting and delicious than a sweet apple muffin with a cup of tea? These apple muffins are full of apple bits with a hint of warm spices.
Perfect for tea time but also great to eat at any time.
Like my other cake recipes the sweetness of these muffins is perfect and not too sweet so if you like them too sweet, you can add two extra tablespoons of sugar into the mixture. Also if you like muffin with streusel (crumb) topping, make a mixture of sugar, butter and flour and top the muffins with it before placing in the oven. I personally don’t want to add extra sugar!
Ingredients for 12 muffins:
• 1 3/4 cup (220 g) all-purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1 teaspoon ground cinnamon
• 1/2 teaspoon ginger powder
• 1/4 teaspoon salt
• 2 cups peeled, cored and finely chopped apples (you'll need 2 large apples)
• 1/3 cup (80 ml) vegetable oil
• 3/4 cup (150 g) brown sugar
• 1/2 cup (120 ml) milk
• 1 large egg
• 2 teaspoons lemon juice
Bake in a preheated oven at 180°C (360°F) for about 30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
