Gooey Spice Cake // EASY AND DELICIOUS VEGAN DESSERT
GOOEY VEGAN SPICE CAKE
Serves 8

Cake Batter
2 Tbsp egg replacer + 1/4 cup warm water
1 Tbsp vegan butter
1 cup sugar
1 Tbsp apricot jam
1 tsp baking soda
1/2 cup plant based milk
1/4 cup balsamic vinegar
1 cup flour, sifted
1/4 tsp sea salt
Sauce
1 cup plant based milk
3/4 cup sugar
1/2 cup vegan butter
1 tsp vanilla
2 tsp pumpkin pie spice
Step One
Pre-heat the oven to 350°F. Mix the egg replacer with the warm water and allow to sit for 10 minutes. Whip the vegan butter with the sugar for 2 minutes with a whisk. Add the egg replacer mixture and whip well. Add the apricot jam and whip some more. Next add the baking soda, plant based milk, and balsamic vinegar. Whip some more until well mixed. Next add in the sifted flour and sea salt. Stirring until just mixed, being careful not to over-mix.
Step Two
Pour the cake batter into a greased 9” cake pan. Bake in the oven for 45 minutes or until a toothpick comes out of the center of the cake clean.
Step Three
While the cake is baking, place all the sauce ingredients into a small sauce pan and bring to a boil. Turn down the heat and reduce for 45 minutes minutes or until the sauce coats the back of a spoon.
Step Four
When the cake is done, remove it from the oven and pierce the top with a fork or toothpick. Pour 1/2 the sauce over the top and allow to rest for 15 minutes, both to cool and to allow the sauce to sink in. You can serve as slices or use a cookie cutter to cut out individual portions. Serve with vegan whipper cream or ice cream and drizzle with more of the sauce.
Notes:
When you mix in the baking soda and vinegar together into the cake batter, it will start to fizz a little and bubbles will form. This is perfectly normal and is part of what creates the sponge texture of the cake.
For the sauce you can use any plant based milk, but I recommend full fat coconut milk for flavor!

Makes about 8-10 servings
Cake Base
110 g butter
12 tbsp sugar
4 egg yolks
4 tbsp sour cream
1 lemon finely grated zest
1 tsp vanilla extract
2 1/2 tsp baking powder
12 tbsp flour
Filling
6 Medium apricots, peeled and sliced
Topping
4 egg whites
10 tbsp sugar
Directions
Preheat oven to 350 degrees F (180 degrees C). Butter 10-inch(26 cm) spring form pan(with a removable base). In a large bowl, cream together butter and sugar until well mixed. Beat in the egg yolks, sour cream, lemon zest and vanilla extract. Stir in dry ingredients, flour and baking powder. Pour the butter mixture into the prepared pan. Sprinkle a little flour over the peach slices and arrange them on the top of butter mixture. Bake for 15 minutes.Meanwhile whip the egg whites until foamy with a mixer. Gradually add the sugar whipping the whole time until it holds very stiff peaks. Remove the pan from the oven and add egg whites on top of the cake and bake for another 20 minutes until golden brown. Run a sharp knife completely around the inside edge of the pan. Let cool at room temperature before serving.

This easy apple cake is a delicious dessert that's perfect for any occasion. The cake has a light and fluffy texture and is infused with the sweet and tangy flavors of apples and lemon juice. The cake batter is made with a combination of eggs, sugar, yogurt, milk, sunflower oil, and vanilla extract. This creates a moist and tender crumb that is perfectly complemented by the sweet and slightly tart apple slices.
To make the cake, you'll need 2 apples, which you'll need to peel and slice into thin pieces.In a pan, melt 25 grams of butter and add apple slices, add 15 grams of lemon juice and 20 grams of sugar. Cook the apple slices in the mixture until they soften a little.
Next, prepare a cake batter by whisking 2 eggs with 130g of sugar, adding 60g of yogurt, 60ml of milk, 60ml of sunflower oil, and a dash of vanilla extract to the egg mixture and whisk until well combined. Sift 200g of flour and 8g of baking powder into the mixture and gently fold until the batter is smooth.
Pour the cake batter into a greased 18cm cake pan and arrange the cooked apple slices on top.
Bake the cake in a preheated oven at 180°C for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Once the cake is done, let it cool in the pan for 10-15 minutes before removing it from the pan and placing it on a wire rack to cool completely. If you like, you can grill the cake for an additional 2 minutes until the top is golden brown. This apple cake is a crowd-pleaser and is sure to become a family favorite!
