ARMENIAN BULGHUR SALAD
INGREDIENTS
1 large Pomagranit / seeded
1 large Red Onion /finely diced
1 large Red Bell Pepper / finely diced
4 to 5 large cloves of Garlic / minced
1 very large or 2 medium red Tomatoes - or 2 cups / chopped
1 cup warm Water
1 1/2 c fine #1- Bulghur
1 to 1 1/2 large Lemon / the juice and the zest, mix with the garlic.
8 to 10 Scallions (green onions ) chopped
1/2 bunch fresh flat leaf Italian Parsley / chopped
1/2 c ( or little less of )light Extra Virgin Olive Oil
Spices...
1 to 2 tsp. of Salt / or to taste
1 tsp.Dry Mint / or more
1 tsp. Aleppo Pepper
1/8 tsp. Ground Cayenne Pepper
INSTRUCTIONS...
Add the diced garlic to the lemon juice and set aside.
In a large sauté pan over medium high heat, warm the olive oil then cook the onions and green pepper just until the onion begins to soften, about 5 to 8 minutes.
Add the garlic and cook for couple of minutes. Add the chopped tomatoes, salt, Aleppo pepper, cayenne pepper, mint, and cook covered on low heat for about 6 to 8 minutes.
In the meantime, add the warm water to the bulghur, the lemon juice with the garlic,the zest , parsley and the scallions. Make sure to leave a little aside from the parsley and scallions, for sprinkling on top, and also with the pomagranit.
Now , remove the pan from the heat.
Open a well in the center of the BULGHUR salad, and carefully pour the hot sauce in the center. Using a spoon, carefully while fluffing it mix together until all the BULGHUR is coated.
Cover with a lid and throw a towel over it and let it rest for about 15 minutes.
After the 15 minutes, allow to cool off to room temperature.
Fluff it out again. Taste!
If anything needs to be added? Then add now ????????????
Refridgerate !!
When serving ?
Top with green onion, fresh parsley, and pomagranit and a drizzle of extra virgin olive ( optional ) before serving.

How to me mom’s tasty Armenian potato salad - I’m sure you will never make the mayonnaise based version again! My daughter always asks for Nana’s potato salad and I love making it for her when she visits! It is the perfect side dish for any time of year! Adjust the seasonings, lemon and olive oil after you mix all of the ingredients to suit your taste. I like a lot of olive oil and lemon but you may want to add less. Mom’s Armenian Potato Salad
Ingredients
3 Pounds Yukon gold potatoes or other white potato variety (avoid starchy potatoes, like Russets, because they will fall apart instead of maintaining their shape.
1 bunch green onions, 1 1/2 cups chopped
1 cup chopped curly or flat leaf parsley
1 ½ lemons freshly squeezed to taste
1 and 1/8 tsp salt to taste
1/2 teaspoon ground black pepper to taste
Pinch or two of ground white pepper
Pinch of fine red pepper
1/3 cup good quality extra virgin olive oil to taste
Directions
1. Boil potatoes in their jackets until barely tender. When cool enough to handle but still warm, cut into generous bite-size pieces.
2. Place potatoes in a large salad bowl along the green onions, parsley, and lemon juice; carefully toss again. Dribble oil over the vegetables and season to taste with salt, pepper and cayenne pepper; toss and set aside for several hours for salad ingredients to mellow. If refrigerated, bring to room temperature before serving.

SALAD INGREDIENTS:
►1 lb Roma tomatoes
►1 English cucumber
►½ medium red onion, sliced
►2 avocados, diced
►2 Tbsp extra virgin olive oil or sunflower oil
►Juice of 1 medium lemon (about 2 Tbsp)
►¼ cup (1/2 bunch) cilantro, chopped
►1 tsp sea salt or ¾ tsp table salt
►⅛ tsp black pepper

HIGHLY RECOMMENDED TO USE ONLY RED IDAHO POTATOES FOR THIS RECIPE.
INGREDIENTS ...
18 to 20 - small apricot size Red Idaho Potatoes / or 12 to 14 mediume size
1 1/2 heads of Garlic / divided 1 head for cooking with the potatoes the other 3 to 4 cloves ( raw ) for the salad.
1/2 a large juicy Lemon / use the zest also
1 small Red Onion
1 large bunch of Green Onions
2 to 3 sticks of celery
1/2 bunch of Italian Parsley
1/4 cup to 1/3 cup of cold Water / to thin out the sauce. Use as much NEEDED - TO MAKE A HEAVY CREAMY DRESSING.
1/2 c White Vinigar and enough Water to cover the potatoes, plus 3 Tbsp. Salt and LET SOAK FOR 1 HOUR.
DRESSING SEASONINGS & ETC ....
1/4 c Tahini
4 to 5 heaping Tbsp. of Sour Cream / use everyday tablespoon
1/4 c Ranch Dressing
1 Tbsp. Pomegranate Molasses
1/4 c Olive oil / fine quality
SEASONINGS ... START OFF WITH 1/2 TSP. EACH
Add more as you make it.To your taste.
Salt & Black Pepper
Dry Mint / 1 to 2 tsp.
Sumac / 1 to 1 1/2 tsp.

2 oz. or 2 Dills of Cornichon or Kosher Baby Dills Pickles; diced
Juice from 2 Lemons
Salt and Pepper to taste
