Hello Friends!
I’ve been craving pizza and this recipe hit the spot. It is a really easy recipe which makes it perfect for a work night, especially if you use a store bought crust like I did or even naan bread would work great.
This recipe is based on one from one of my favourite food websites Budgetbytes. If you want to try out her recipe here it is:
Preheat your oven to 400 degrees Fahrenheit.
Creamy Spinach and Artichoke Pizza
Ingredients:
* 1/2 half cup of frozen spinach (note that this is the amount with the water squeezed out so probably about 1 cup unsqueezed)
* 1 red pepper
* 1 teaspoon of olive oil (if you use oil)
* 2 crushed garlic cloves or 1 tsp of garlic seasoning/powder
* 1/2 cup of vegan cream cheese
* 1/2 cup of non-dairy, unsweetened, milk
* 1 small jar of marinated artichoke hearts (about 170 ml), drained
* 1 pinch of chili flakes (optional but very good)
* 1/2 cup of sliced black olives (optional)
* 1/2 to 1 cup of vegan mozzarella shreds
Instructions:
1. Drain your olives and artichoke hearts
2. Chop the red pepper to desired size
3. Chop the artichoke hearts
4. In a sauce pan over medium/low heat add olive oil
5. Once the oil is warm add the garlic and stir being careful not to burn the garlic if using fresh
6. Add in your cream cheese and stir until it melts
7. Add your non-dairy milk (*see my note below)
8. Add the spinach (that you’ve squeezed the water out of) and stir until everything is mixed well.
9. Brush a little olive oil on your crust if desired and spread the sauce mixture evenly over the crust.
10. Add your peppers, artichoke hearts, olives and any other toppings you want.
11. Sprinkle on your mozzarella
12. Bake for 15 to 20 minutes depending on how hot your oven is. Mine took 20 minutes.
13. Enjoy ☺️
Other toppings that would be great on here are mushrooms, pineapple, roasted red peppers or sun dried tomatoes.
*Opps! I forgot to add the milk in the video and it turned out fine. If you are making a bigger pizza you might want to add 1/4 to 1/2 cup for more sauce.
Please give the video a thumbs up if you liked it and, most importantly, subscribe ???? because that really helps the channel grow!
