Mom's Scalloped Potato Gratin - Food Wishes
This simple, comforting potato casserole was one of my favorite foods growing up, and it would have been a favorite of mine as an adult, if I hadn’t gone to culinary school. Happily, I’ve rediscovered how great this significantly less rich milk-based version is, and I’m very excited to be sharing it with you. Enjoy!

SCALLOPED POTATOES WITH HAM
4 Tbsp. (½ stick) butter, plus extra for greasing
½ onion, diced
1 heaping tsp. minced garlic
½ cup all-purpose flour
2 cups whole milk
1 cup heavy cream
1 tsp. black pepper
1 tsp. seasoned salt
2 lbs. russet or Yukon gold potatoes, scrubbed clean
2 cups diced ham
2 cups grated cheese of your choice
Chopped parsley (optional)
1. Preheat oven to 375°F.
2. Add the butter and onion to a large skillet over medium high heat and sauté until it is starting to soften. 3-4 minutes. Add in the garlic and stir a few seconds longer.
3. Sprinkle the flour over the onions and garlic and whisk together. Cook until golden brown.
4. Stir in the milk and cream and whisk the mixture around, allowing it to thicken. Stir constantly.
5. Add the pepper and seasoned salt. Reduce the heat and keep it warm.
6. Slice the potatoes as thin as you can. Using a mandolin is the easiest way.
7. Generously butter a 2-quart baking dish. Add half of the sliced potatoes. Then add half of the ham.
8. Sprinkle on half the cheese and then pour on half the sauce from the skillet.
9. Repeat with the rest of the ingredients. You can sprinkle extra pepper on top.
10. Cover the dish with foil and bake it for 35-40 minutes. Remove the foil and it for an additional 15-20 minutes, until the cheese is golden brown and the sauce is bubbling.
11. Sprinkle with chopped parsley and serve it up! Enjoy!

Ham and Potatoes Au Gratin
Welcome Back! This is a recipe for a delicious traditional Ham & Potato Au Gratin made on the stovetop and finished in the oven. Perfect on cold days like these!!!! In the video I am making a bechamel sauce and then adding Monterey Jack cheese to make a cheese sauce. You can use the cheese of your choice, I used cheddar as the topping. You could also use panko or crushed Ritz crackers for your topping. This tastes wonderful with leftover ham or honey ham. It's a good way to use that leftover ham!!!
INGREDIENTS
3-4 Peeled Russett Potatoes, sliced and boiled for 4-5 minutes (do not overcook)
2 Cups Diced Ham
1/4 Cup or Half of an onion, diced small
1 Stick Butter
6 T All Purpose Flour (for the roux)
3 C 2% or Regular Milk
2 C shredded cheese - or one cheese block shredded PLUS an extra cup for topping the gratin.
2 t White Pepper
1. Peel and Cook the potatoes - do not overcook - potato slices do not have to be too thin
2. Dice the ham
3. In a saucepan, melt 1 stick of butter, then add the onions, cook until softened.
4. Next, add the flour to the pot and stir to make a roux. Allow the roux to bubble for 5 minutes, but keep stirring it, so it doesn't burn.
5. Add the milk to the roux and use a whisk to start incorporating the roux and milk. Bring to a simmer and the sauce should thicken.
6. Whisk in the white pepper.
7. Lower the heat once the sauce thickens - now add the cheese and whisk until it is melted. Taste the sauce and adjust seasonings.
8. Remove sauce from heat.
9. Pre-heat oven to 350 F.
10. Now add the potatoes and ham to a baking dish - make sure it is big enough. You could use a 9 x 13 Pyrex for this recipe.
11. Pour the sauce over the potatoes/ham mixture and use a spatula to smooth out the cheese sauce. Gratin should be completely covered with cheese.
12. Now sprinkle a layer of shredded cheese over the top of the casserole.
13. Bake in the oven uncovered for 45 minutes until the cheese on top is golden brown.
14. Remove from oven and let cool for at least 15 minutes.
15. Serve immediately.
