How To make Austrian Butter Cookies
1 c Flour
1/2 c Butter; softened
2/3 c Nuts; chopped
1 c Sugar
Sift the flour and sugar together. Add the chopped nuts. Blend in the butter. Stir with a spoon until a soft dough is formed. Chill for 1-2 hours. Roll the dough out on a floured board to 1/8" thickness. Cut into rounds with a biscuit cutter and place rounds on an ungreased cookie sheet. Bake at 375 (191C) for 7-10 min. Yields about 3 dozen. Can be made into a sandwich cookie. Traditional Austrian manner is to spread thinly with jam, cover with a second cookie, then cover top with chocolate frosting and a pecan or walnut half. CHOCOLATE FROSTING 1 TB butter 1/3 c powdered sugar 1 egg yolk 1 sq unsweetened chocolate, -melted and cooled. Cream butter and sugar. Add egg yolk and chocolate. Blend well. -----

-66 grams icing sugar
-pinch of salt
-pinch of lemon zest (optional)
-17 grams egg yolk
-165 grams all purpose flour
Caramel filling:
-25 grams butter
-30 grams brown or yellow sugar
-30 grams glucose
-30 grams sliced almonds (chopped)

3 Ingredient Butter Cookies Recipe | Easy Ways with One Dough
Get ready to impress your friends and family with these irresistible 3 ingredient butter cookies that strike the perfect balance between simplicity and flavour. Ingredients:
* 1 cup (2 sticks - 225g) salted butter, softened
* 1/2 cup (100g) super fine sugar
* 2 cups (250g) all-purpose flour
Optional addition:
vanilla extract
Instructions:
* Preheat your oven to 350°F (180°C).
* Grease a round or square baking pan, or line it with parchment paper for easy removal.
* In a mixing bowl, cream together the softened salted butter and sifted super fine sugar until light and fluffy. You can use a hand mixer or stand mixer for this. Mix in the vanilla extract if you're using it. This is optional, but it adds a lovely flavour to the shortbread.
* Gradually add the all-purpose flour to the butter-sugar mixture, mixing until a soft dough forms. You can use a spatula or your hands for this step.
Different ways to shape your cookies:
A) Once your dough forms, shape it into a disk form, wrap in plastic wrap and refrigerate for 30 minutes. Then roll it out to a thickness of about 1/4 inch (0.5cm). You can use a rolling pin and a little extra flour if needed to prevent sticking. Use cookie cutters or a sharp knife to cut the dough into desired shapes.
B) With the leftover dough from the previous step, get a walnut-sized dough and roll it into a small ball. Transfer it to baking tray and use a fork with a bit of oil to gently score the surface of the dough. This will help the shortbread bake more evenly and create a classic shortbread appearance.
B) Once your dough forms, roll it into a log shape, wrap it with plastic wrap and freeze for 30 minutes. Then unwrap and slice the log into 1/2 inch (1cm) slices.
* If you like, you can now sprinkle a bit of granulated sugar over the top of each cookie before baking. This is optional but adds a nice touch of sweetness and texture.
* Place the pan in the preheated oven and bake for about 15 minutes, or until the edges are lightly golden. The centre might still look slightly pale.
* Once baked, remove the pan from the oven and allow the cookies to cool in the pan for about 10 minutes. Then, carefully remove it from the pan and transfer it to a wire rack to cool completely.
* Once completely cooled, your butter cookies are ready to be enjoyed! They are perfect with a cup of tea or coffee.

Baking cookies is one of the most popular Christmas traditions in Germany and other European countries. The ritual of baking during Advent dates back to the Middle Ages, when spices from the Orient found their way to Europe. In Austria especially, people developed many different types of tasty cookies in the 19th century, such as the famous “Vanillekipferl” or the well-known “Spitzbuben”.
To this day, the ritual of baking cookies together at Christmas time has remained. The top selling German Christmas-related products are cookie cutters, vanilla crescents and cinnamon stars.
We invited Susi Carreira and Katja Stieber who run a baking blog called “Küchen-Miezen” to teach you how to make the classic German “Plätzchen”.
