AVOCADO STUFFED CHERRY TOMATOES
Ingredients:
30 large cherry tomatoes
1 large ripe avocado
1/2 tsp. curry powder
1/2 tsp. grated onion
2 tbsp. lemon juice
1/2 tsp. chili powder
salt and pepper to taste
Directions:
Cut thin slices off the top of the tomatoes and scoop out the pulp with a spoon.
In a medium bowl, mash the avocado with all the spices until smooth. Fill the tomatoes with avocado mixture. Serve chilled or at room temperature.

Ingredients:
Tomatoes
Taco meat, fully cooked
white onion, chopped
cilantro, chopped
shredded cheddar
sour cream
guacamole or fresh avocado
Optional:
Jalapeños
Hot sauce
Recipe:
1. Preheat oven to 350F.
2. Cut the top off your tomato, hollow it out well and pat the inside dry with a paper towel.
3. Add a tablespoon of cheddar, white onion, & beef.
4. Repeat above step.
5. Top with cheddar & jalapeños.
6. Add to baking dish and bake for 15 minutes.
7. When done, add avocado, sour cream, hot sauce, cilantro and enjoy!

Easy Avocado stuffed Cherry Tomato Skewers with Black Olives & Parsley Gremolata
Hi everyone! Firstly thank you so much for liking my videos and subscribing to my channel! Kindly continue to do so, motivates me to keep cooking and sharing my recipes!
I bring to you another addition to my appetizer series. This one too is extremely easy and quick to make with easily available ingredients.
The recipe has 3 parts :
1. A quick avocado mouse
2. Parsley gremolata
3. The stuffing and plating
Notes:
A gremolata is a herb condiment classically made of lemon zest , garlic and parsley.
Do a quick chill for the avocado mousse before stuffing the cherry tomatoes.
For the plating I have brushed balsamic reduction across the platter. You can use a silicon brush like me , however for a better effect you can try a flat paint brush.
Lastly a balsamic reduction is reduced balsamic vinegar and sugar . Readymade reduction is available in supermarkets however you can make your own easily at home by bringing the vinegar and sugar/ honey to a boil and simmering it till it reduces to a thick consistency.

Savory Stuffed Tomatoes - Easy and Delicious
Stuffed tomatoes are a delicious beef steak tomato with the tops cut off and the flesh removed. They are then stuffed with a combination of Italian sausage, or the sausage of your choice, onion, minced garlic, pepper, rice, and mozzarella cheese. Extra ingredients can be added to the stuffing if you wish. For example, bell peppers and mushrooms would not go amiss. Lastly the tomatoes are topped with a butter, bread crumb, and mozzarella mixture. Pop these back into the oven for a few minutes to brown and heat, garnish with some fresh parsley, and you are ready for a delicious treat.

Ingredients:
3 large beef steak tomatoes
3 sausages with casing removed
1/2 of a small chopped onion
1 tsp of minced garlic
1 cup of pre-cooked rice
pepper to taste
For the Topping:
2 tbsp of melted butter
1/2 cup of panko bread crumbs or the bread crumb of your choice
1/4 cup of mozzarella

Method:
Preheat your oven to 350 F 177 C.
Cut the tops off the tomatoes and remove the flesh. Set them aside on a dish sprayed with baking spray or butter.
Heat a pan over medium high heat. Place the sausages in, break them up, and fry them until browned.
Put the onion in and fry until it is translucent. Add in the garlic and fry for a minute or so until fragrant. Then place the rice and pepper in, stir and cook until heated through.
Spoon the mixture into each tomato.
Add the butter, bread crumbs, and mozzarella to a bowl and mix until well combined. Spread the topping over the mixture.
Place the tomatoes into the oven and bake for 15 to 20 minutes until the bread crumbs are browned.
Serve and enjoy your stuffed tomatoes.
