1 T Lemon juice
1 x Clove garlic
1/4 t Black Pepper
1 ds Ground Cumin
2 T Sesame seeds
2 T Finely chopped fresh Parsley
* and cut into 1/2" cubes (about 3 cups) Steam eggplant until tender, about 8 minutes. Place cooked eggplant in food processor. Add tahini (sesame paste),lemon juice, and garlic. Puree. Stir in remaining ingredients; spoon into serving bowl. Garnish with parsley sprig. Serve warm or chill. Makes 2 cups. HINTS: - smaller eggplants have thinner peels and a sweeter flavor. Select those with firm skin free of soft spots. ~ store sesame seeds in cool, dark place in refrigerator.

Egyptian Baba ghanoush / Moutabel:
800g Aubergines ~ 250g roasted aubergine flesh drained
15-25g parsley
2 Garlic Cloves
2 Tbsp tahini
2-4 Tbsp yoghurt depending upon how thin you want it
2 Tbsp freshly squeezed lemon juice
2 Tsp Vinegar
3/4 Tsp Salt
1/4 Tsp Ground Cumin
1/4 Tsp Ground Coriander
1/8 Tsp Cayenne Pepper
Olive oil for topping
Syrian / Lebanese Baba ghanoush:
800g Aubergines ~ 250g roasted aubergine flesh drained
1/2 Small onion
1 Small Tomato
1 Sweet Red pepper
1 Green Chili
1 clove garlic
10g Parsley
5g Mint
10g Pomegranate Molasses
1/4 Cup Lemon Juice
25g Olive oil
3/4 Tsp Salt
1/8 Tsp Cumin

In our family, eggplant dip is a synonym for baba ganoush, a popular Levantine dish made with roasted eggplant and served as a meze, aka appetizer, on a platter with pita bread and other dips, falafel, and small dishes.
⭐️ Ingredients
2 medium (1.1 kilograms) eggplants (about 2½ pounds) (+ 1 tablespoon olive oil, ¼ teaspoon salt, ¼ pepper to season them before roasting)
3 tablespoons tahini (made with 100% hulled sesame seeds)
2 tablespoons lemon juice (freshly squeezed)
½ clove garlic (or more to taste)
½ teaspoon salt
2 tablespoons flat-leaf parsley (finely chopped)
1 tablespoon mint (optional, finely chopped)
1 tablespoon olive oil (to drizzle on top)

✅Ingredients
• 1 large eggplant
• 1 teaspoon salt, divided
• 1 head garlic
• 1 tablespoon olive oil
• 1 lemon, juiced (about 1/4 cup)
• 1/4 cup tahini paste
• 2 tablespoons freshly chopped parsley
✅Instructions
00:00:19 - How to roast eggplant
1️⃣ 00:00:13 - Preheat an oven to 400 degrees F. Lightly grease a baking sheet.
2️⃣ 00:00:19 - While the oven is preheating, slice eggplant in half lengthwise. Use a fork to poke a few dozen holes on the skin side of the eggplant. Sprinkle flesh with 1/2 teaspoon salt and let sweat 10 minutes. Rinse and pat dry. Place eggplant flesh side down on prepared baking sheet.
3️⃣ 00:01:16 - Cut the tip of the garlic off to expose cloves inside. Place garlic onto a square of aluminum foil. Drizzle a little of the olive oil over the exposed garlic cloves and wrap tightly with foil. Place garlic on the sheet pan with the eggplant. Drizzle remaining olive oil over eggplant.
4️⃣ 00:01:59 - Roast in the preheated oven for 30 to 40 minutes until eggplant is tender.
5️⃣ 00:02:05 - Use a large spoon to scoop the flesh from the eggplant and place in a food processor. Gently squeeze garlic cloves out of their peels and into the food processor.
6️⃣ 00:02:22 - Add in lemon juice, tahini paste, and remaining 1/2 teaspoon salt. Puree until smooth.
7️⃣ 00:03:00 - Transfer to a bowl and refrigerate 2 hours before serving.
8️⃣ 00:03:04 - Sprinkle with parsley to serve and drizzle on additional olive oil, if desired. Serve with pita chips or pita bread.
