How To make Baked Crab Potatoes
-JUDI M. PHELPS 2 c Crabmeat
4 lg Baking potatoes
4 T Butter
1/2 c Onion; chopped
1/2 c Mushrooms; sliced
Ground pepper to taste 1 c Dry vermouth
2 T Low-fat plain yogurt
2 T Sour cream
1/4 c Half and half
3/4 c Gruyere cheese
Clean and bake potatoes. Cool slightly and cut in half, lengthwise. Place pulp into bowl, leaving about 1/4-inch shell. Reserve skins and mash pulp. Melt butter in skillet and saute onion until it takes on a light coloring (about 15-20 minutes). Add mushrooms and saute another 5 minutes. Add the crabmeat and pepper. Add vermouth and bring to a boil. Make sure you stir frequently. Cook mixture until liquid is absorbed. Remove from heat and add yogurt and sour cream, then add half and half. Combine crabmeat, onion mixture, pulp from potato, and about 1/2 of cheese. Add additional ground black pepper and a bit more half and half if desired. Place the mixture into the potato skins. Sprinkle with additional 1/4 cup cheese. Bake at 400 degrees F. until cheese bubbles. This is yummy good! Shared and MM by Judi M. Phelps. jphelps@slip.net or jphelps@best.com

Crab Stuffed Twice Baked Potato
These will fill you up and are easy to make. You can get creative and add other stuffings besides crab meat too.
Ingredients
3-4 baking potatoes
1 cup crab meat (imitation will work)
1/2 cup sour cream
1 cup cheese
1/2 cup butter (1 stick)
4 chopped green onions (with greens)
2 1/2 tsp paprika
1 tsp each salt/pepper
oilive oil or butter for potato skins
Directions:
Preheat oven to 450. Clean potato skins then lightly oil with butter or olive oil. Bake potatoes until soft. (usually takes about 1 hour). While potatoes are baking, mix together (with electric mixer) butter, sour cream, cheese, chopped onions, paprika & seasoning until blended.
When potatoes are done. Let cool until easy to handle. Cut in half lengthwise and scoop out the potato ( be careful not to break the skins) Add the potato to the blended ingredients and mix until completely blended together. Stir in the crab meat with a spoon or fork.
Fill each potato skin with the mixture. Season the top with a little salt and paprika then bake in oven on 450 for 15 minutes.
