How To make Baked Crab Potatoes
-JUDI M. PHELPS 2 c Crabmeat
4 lg Baking potatoes
4 T Butter
1/2 c Onion; chopped
1/2 c Mushrooms; sliced
Ground pepper to taste 1 c Dry vermouth
2 T Low-fat plain yogurt
2 T Sour cream
1/4 c Half and half
3/4 c Gruyere cheese
Clean and bake potatoes. Cool slightly and cut in half, lengthwise. Place pulp into bowl, leaving about 1/4-inch shell. Reserve skins and mash pulp. Melt butter in skillet and saute onion until it takes on a light coloring (about 15-20 minutes). Add mushrooms and saute another 5 minutes. Add the crabmeat and pepper. Add vermouth and bring to a boil. Make sure you stir frequently. Cook mixture until liquid is absorbed. Remove from heat and add yogurt and sour cream, then add half and half. Combine crabmeat, onion mixture, pulp from potato, and about 1/2 of cheese. Add additional ground black pepper and a bit more half and half if desired. Place the mixture into the potato skins. Sprinkle with additional 1/4 cup cheese. Bake at 400 degrees F. until cheese bubbles. This is yummy good! Shared and MM by Judi M. Phelps. jphelps@slip.net or jphelps@best.com

8 oz large shrimp
1 onion, diced
2 tbsp garlic , fresh
1 tsp green seasoning
2-4 sticks butter, high quality butter
1 1/2 tbsp salt free cajun seasoning
1/2 tbsp Old bay, plus more dusting
1 tsp Creole seasoning, plus more for dusting
1/2 tsp Sazon Tropical

1/2 stick butter
2-3 tbsps minced garlic
1/2 diced shallot
2 tbsps capers
1 tsp better than bouillon lobster base
zest and juice of 1/2 lemon
All Purpose Seasoning and Old Bay
Red Pepper Flakes
1/4 cup diced parsley
2 cups dry white wine or chicken or seafood broth

Dipping Butter:
2 sticks of butter (unsalted)
2-3 tablespoons of minced garlic
1/2 tablespoon of onion powder
1/2 tablespoon of garlic powder
1/2 tablespoon paprika
1/2-1tablespoon brown sugar
1 tablespoon parsley flakes
1-2 tablespoons lemon pepper (depending on how lemony you want it. Add 1/2 tablespoon and taste... add more if desired)
1tablespoon old bay seasoning
Take your favorite seafood boil ingredients and add it to the roasting bag.
Knot the top. Be careful not to tear the bag.
Sit it in a baking dish or baking sheet .
Bake it at 350 for 45-50 minutes and then turn your oven up to 450 and bake for a additional 15 minutes. If your using baby potatoes 50-60 minutes should be fine.
