How To make Baked Sole with Lemon Sauce
2 lb Sole, Fresh or Frozen
1 t Salt
1/4 ts Pepper
3 tb Butter
2 Egg Yolks
1 tb Water
1 tb Flour, All-Purpose
3/4 c Chicken Broth
2 tb Lemon Juice
1 Green Olives, Stuffed
Pre-heat oven to 350?F. Grease a large shallow baking dish. Arrange fillets in dish. Sprinkle fillets with salt and pepper. Dot with 2 T butter. Bake for 10 minutes or until fish flakes easily when tested with a fork. Start sauce preparation about 15 minutes before you put the fish in the oven. In a cup, mix egg yolks with water, set aside. In heavy saucepan over medium heat, into 1 T of hot butter, stir flour until well blended. Gradually stir in chicken broth and lemon juice. Cook with stirring until mixture is thickened. Remove saucepan from heat. Into egg yolks, stir 6-8 drops of Tabasco Sauce. Slowly pour egg mixture into sauce, stirring rapidly to avoid lumping. Cook with stirring until thickened (DO NOT BOIL). Spoon off any excess liquid from fish. Pour sauce over fish and garnish with sliced stuffed green olives. The olives add a lot more to this dish than you might imagine. From: Syd's Cookbook.

Lemon Butter Sauce for Fish
The most magical 2 ingredient sauce you'll ever make!
LIGHTLY BREADED LEMON SOLE WITH LEMON & CAPERS
Lemon sole is such a delicate and light option/choice that I would recommend if you are trying to introduce some more seafood into your diet ???? it’s also so quick to cook, so hand to have for a mid week meal ???? tag me if you make it!
Ingredients
- 2 x lemon sole fillets (@bernardcorriganltd)
- 50g plain flour
- salt & pepper
- oil
- 75g butter
- 1-2 x tbsp lemon juice
- 1-2 x tbsp capers
- handful parsley
If you want to cook these potatoes as well (although I haven’t included the method in video format), you just need to buy baby potatoes in addition to list above and method is below.
Method
1. Weigh flour onto a plate and season with salt & pepper
2. Coat lemon sole fillets in flour
3. Heat up pan on hob, add oil then add lemon sole fillets to pan - cook for 2mins on each side on a medium/high heat
4. Place cooked fillets on plate to the side to allow you to melt sauce in pan
5. Add butter, capers, lemon juice and some parsley - heat until melted
6. Pour sauce over your lemon sole fillets and serve immediately with your choice of sides
Potatoes (same as cod & crispy potato recipe)
1. Pre heat oven to 200 degrees
3. Chop baby potatoes in half and place in lied baking tray - coat in olive oil, salt & pepper
4. Cook in oven for 40mins, shaking tray half way through (at approx 20min mark)
