Such an incredibly GORGEOUS dish, while being (secretly) VERY simple to prepare!
Since it comes out perfectly every time and involves minimal hands-on prep, I love to serve this to guests because it looks a lot more difficult than it really is.
So whether it’s a dinner party, weeknight dinner for the family, or just a delicious meal prep idea – you’re gonna want to add this to your bag-of-tricks!
Because this dish is so simple, be sure to use the freshest ingredients you can find.
This fish stays good in the fridge for up to 3 days when stored properly in a sealed container. Reheats nicely in a skillet or in the air fryer.
❓Do you like cod?
✅ If you’re a fish newbie, think about trying cod which is considered less “fishy” and milder than many other species. Cod is white and a very lean fish that’s slightly sweet with a delicate flaky texture.
➡️ Whitefish is a catchall term for a variety of white-fleshed fish, including haddock, cod, hake, whiting, pollock, and more.
???? Each fish species has its own unique nutritional makeup but they are all incredibly nutrient-dense, delivering a lot of protein and micronutrients to your body for very few calories.

Oven Baked Cod With Ritz Cracker Topping With Butter, Lemon & Parsley
Oven baked cod with Ritz cracker topping with lemon, butter and parsley is a delicious fish recipe that you can put together in about 20 minutes! Join Eric from Simply Elegant Home Cooking as he demonstrates this New England classic. It is very important to buy the highest quality fish you can find, and be sure you get wild caught fish. The cod can be substituted for other white fish such as halibut or haddock. Also, be sure to use Ritz crackers, which have a delicious buttery flavor and consistency. Other types of crackers will not taste as good!
Ingredients:
-2 pieces of thick cut wild caught cod or other white fish
-2 tablespoons butter
-1 small pack of Ritz crackers (approximately 14 crackers)
-1/2 lemon, cut into slices
-1 large handful of chopped Italian parsley
-Salt and pepper to taste
Directions:
-Remove the cod from the fridge 30 minutes before you plan to cook. Pat it dry with a paper towel.
-Crush the Ritz crackers into large crumbs. This can be done either in their packaging or by placing into a freezer bag and using either your hands or a rolling pin. Be sure not to crush too much. You want large crumbs, not a fine powder.
-In a small skillet, melt the butter over a low heat. Once butter is melted, turn off the heat and add the crushed Ritz crackers, along with the parsley, salt, and pepper.
-In either another skillet or sheet pan, melt a small amount of butter to prevent sticking. While the butter melts, season the cod with salt and black pepper.
-Place the cod into the buttered skillet or sheet pan, and spoon over the Ritz cracker and butter mixture. Do not worry if some of it falls off on the sides.
-Place the skillet into a preheated 375 degree F oven, and cook for about 18-20 minutes or until desired doneness.
-Serve and enjoy with the sliced lemon!
LEMON CRUSTED BAKED COD, RICHARD IN THE KITCHEN
Easy baked cod recipe just like you get in your favorite cafeteria. Wild caught cod topped with a mayo and lemon based sauce then baked until the crust is golden brown and the fish is super flaky.
Shopping List:
Wild caught cod fish
Kosher salt and course black pepper
1 tsp. Lemon juice
2 tbls.Lemon zest
1/4 cup mayo
1 tsp. Dijon mustard
1/2 cup Ritz crackers
Sprinkle of white wine
Directions:
Pre-heat oven to 350 degrees
Season the cod fillets with a sprinkle kosher salt and black pepper
Place the cod in the oven for 5 mins. After 5 minutes, remove and sprinkle with white wine.
Prepare the sauce with the mayo, lemon zest and lemon juice
Crumple up the Ritz crackers in a plastic bag.
Remove the cod from the oven and give it a sprinkle of white wine. Place back in the oven for 7 more minutes.
Remove the cod from the oven and topit with the sauce then sprinkle the Ritz crackers over the top of the sauce.
Place back in the oven for 2-3 minutes.
Serve with lemon wedges and your favorite seafood sides.
