Asian stir fried vegetables
It’s hard to pass on a plate of freshly stir-fried vegetables. Especially Asian style cooked in a hot wok. You can still use a frying pan on your domestic stove.
This recipe is so simple, quick to make and makes a great side dish to any Asian meal. If going meatless, you could easily make this your complete meal with a serve of rice. There’s plenty of nourishment and it’s a well-balanced healthy meal.
It’s best to first blanch the broccoli and carrots, but don’t overcook them, you still want to retain a bit of bite after stir frying. If you have a powerful wok burner, crank it up at the very end to get that smoky flavour. If not, don’t worry the verges will still be amazing! Always serve immediately, hot of the wok.

1 - 12oz Can Crushed Tomatoes
1 - Large Onion
4 - Mini Red Bell Peppers
4 - Fresh Tomatoes
3 - Garlic Cloves
1 - Habanero or Scotch Bonnet Pepper
I also added the left over pieces after cutting the red, yellow, green and orange peppers, nothing goes to waste????
Vegetables I Used
1cup - String Beans
1cup - Chopped Cabbage
2 - Large Carrots
2 - Spring Onions
1 - Red Bell Pepper
1 - Yellow Bell Pepper
1 - Green Bell Pepper
1 - Orange Bell Pepper
You may use vegetables if your choice
To Steam & Season Meat
Ginger -About a two thumb sizes
2 - Large Onions
1 - Calabash Nutmeg
3 - Garlic Cloves
1tbsp - Blended Basil (Optional)
1tbsp - Rosemary. You can use Seasoning of choice

Holiday Roasted Vegetable Medley ❤
This Holiday Roasted Vegetable Medley is delicious, easy, healthy and very colorful. When I think of the holidays I think of this dish. I love to season my vegetables with thyme, sage, rosemary and finely minced garlic all tossed together with canola oil, plenty salt and freshly ground pepper and Balsamic Vinaigrette to give it a tangy finish, then roasted to perfection, and this will give you perfect caramelized delicious vegetables every time. The trick to getting these vegetables perfectly roasted is to cut them all the same size as best as you can, and you can pick your favorite combination root vegetables too. This dish will be a winner on your Holiday table.
INGREDIENTS----------------
3/4 lb gold potatoes (peeled and cubed)
3/4 lb sweet potatoes (peeled and cubed)
3/4 lb carrots peeled and cubed
3/4 lb beets (peeled and cubed)
1/2 large chopped purple onion
3 large minced garlic cloves
1/4 C. Canola oil
1/2 tsp dried thyme
1/2 to 1 tsp rubbed Sage
1 to 2 tsp freshly chopped rosemary
2 to 3 tsp balsamic vinaigrette
Sallt
pepper
chopped fresh parsley for garnish
