I'm planning an extreme grocery budget challenge where I'll be eating for $20 for the week. I'm planning frugal meals to save money on groceries. I'll be doing some healthy meal prep to save time with my meals. In this Aldi grocery haul I'll be reusing ingredients across meals. This meal plan can be doubled or tripled to feed a family on a budget.

Quinoa Salad
• 1 cup quinoa
• 2 cups water
• 1 ½ cups chickpeas
• 1 persian cucumber – or if using another type remove seeds
• ½ red bell pepper
• 1/2 cup finely chopped flat-leaf parsley (from 1 large bunch)
• ¼ cup olive oil
• ¼ lemon squeezed
• 1 tablespoon red wine vinegar, or vinegar of your choice
Cook the quinoa in 2 cups water. Bring to a boil, then cover and simmer for about 15 minutes or until done. Let cool, mix in with chopped vegetables.
Chayote Soup
2 cups water
1/2 Not Chicken bouillon
2 handfuls of spinach
1 chopped carrot
1/2 chopped chayote
1/3 bag of video noodles -brown these first in the pan with some oil
MY NEW BREAKFAST OBSESSION
Lightly toast 1/2 bagel, top with small amount of avocado, mash to creaminess texture, top with shredded carrots, and fried egg. Top with small slivers of green onion and chili garlic sauce, or your favorite hot sauce.
Sesame Dressing for Quinoa Bowl
1 tbs low sodium soy sauce
1 tbs sesame sauce
1 tsp of balsamic dressing
1 tsp brown sugar? or more to taste
garnished with sesame seeds
Here is the normal recipe
1/4 c low sodium soy sauce
1/4 c sesame oil
2 tbs balsamic vinegar
2 tbs brown sugar
*optional 1-2 tbs chili oil
use this with cold spaghetti noodles, add in broccoli, red pepper, mushrooms, green onions, etc.

EXTREME BUDGET FAMILY DINNERS - FRUGAL MEALS YOU'LL WANT TO MAKE EVERY NIGHT!
Today I'm making frugal meals. I've taken the very popular taco spaghetti recipe and reworked it to make it more affordable. It was AMAZING! ???? This will be your families new favorite recipe! I also included a recipe for one of my families favorite go to convenience meals. These are super fun recipes that are kid and teen friendly.

TACO SPAGHETTI
ground turkey- FESTIVE brand at Walmart 2.54
extra sharp cheddar Great Value brand Walmart 2.00 _ You won't use all of this.
tomatoes w/ green chilies Great Value brand Walmart 0.88
spaghetti 1 lb box Great Value brand Walmart 1.12 - You won't use all of this.
TOTAL 6.54
You will need taco seasoning if you don't already have it. Here is a recipe to make your own.
Taco seasoning
*I suggest going light on the red pepper flakes. This is hot.
brown ground turkey, add taco seasoning or 1 packet seasoning. Add in about 3/4 cup water or more if needed. Let simmer. Cook spaghetti (enough for 4 people) in separate pot in heavily salted water until al dente and then add in to the pot with the ground turkey mix. Mix together, then top with shredded sharp cheddar.
*optional - top with chopped cilantro.
To save money, you can use a half pound of the meat, add in black beans ( or pinto) or corn, or just use more spaghetti
YAKISOBA
1 container yakisoba $3.99 -the kind that has 3 packets of noodles in it with seasoning packages.
1 bell pepper $1
carrot 0.3
tofu 1.69
TOTAL 6.98
Or just use whatever veggies or meat you have on hand to mix in with the noodles.
Stir fry veggies until level of tenderness that you want. Add in noodles and stir fry, then add seasoning.
CHINESE SMASHED CUCUMBERS WITH SESAME OIL AND GARLIC

1½ tbs rice vinegar
2 tsps sesame oil
2 tsps soy sauce
1 tbs grapeseed or extra-virgin olive oil
1 garlic clove minced
Red pepper flakes, to taste
1 tsp salt, plus more for cucumbers
2 tsp sugar
*If you want you can garnish with cilantro and sesame seeds
Cut cucumbers into pieces about 4 inches long. Cut each piece in half lengthwise. Place cucumber cut side down. Lay the blade of a large knife flat on top the cucumber and smash down lightly. Do this to smash all cucumbers lightly.
Place the cucumber pieces in strainer and toss with a pinch of salt and a pinch of sugar. Let sit on the counter for 15 to 30 minutes.
Make the dressing: In a small bowl, combine salt, sugar and rice vinegar. Stir until salt and sugar are dissolved. Stir in sesame oil and soy sauce.
When ready to serve, shake cucumbers well to drain off any remaining liquid and transfer to a serving bowl. Drizzle with olive oil and toss. Add dressing until cucumbers are coated. Serve right away. These can be garnished with cilantro and sesame seeds.
